There are several but the easiest is Cuban roast pork. Start with a 12 pound shoulder, bone in and some of the skin still on.
Mix the marinade in a small bowl: with:
3 table spoons of oregano
5 cloves crushed garlic
the juice of 4 or 5 bitter oranges (or half cup of white vinegar)
a generous amount of salt
Rub the meat with the marinade. Cover with plastic & let sit in the fridge, in a glass bowl, at least 24 hours - turing every now and then.
Take out of the fridge a few hours before cooking. Set the oven on high, put the meat in a shallow pan and cover with foil. Put the meat in and after an hour turn the heat down to medium hot. Check the meat in about 2 hours... take the foil off and let the meat get a crust.
Serve with white (basmati) rice, black or red beans, fried plantains and a slice of avaocado. A cold mango for each person at the table will be the best desert.

SOUTHERN CORNBREAD
Put about a quarter cup of vegetable oil in a 10 inch cast iron skillet and put the skillet in the oven. Turn the oven on to 425 degrees F. and let it preheat, along with the skillet you put in. THIS IS KEY!
In a bowl, stir together well:
3/4 cup of yellow corn meal
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
In another small bowl, mix:
1 egg, slightly beaten
2 tablespoons vegetable oil
Add egg/oil mixture to dry ingredients. Stir in enough buttermilk to make it fairly thin but not as thin as pancake batter.
By now your skillet should be very hot or smoking. Take it out of the oven and immediately pour the batter into the skillet. It should sizzle; do not stir or spread out the batter.
Bake for 20 to 25 minutes, or until edges are crusty and top is brown. Remove from oven and immediately turn out onto a wire rack. If you leave it in the pan the bottom will not be crusty. Cut a square off the corner, slice horizontally and put some butter inside. Let the butter melt and enjoy some good old southern cornbread. Add a glass of cold milk and you're eating GOOD food!

My mother makes a recipe that my grandmother gave her - it's called Chicken Divan and my whole family loves it! I can't think of the ingredient amounts offhand, but it consists of rice, a lot of cut up pre-cooked chicken, broccoli, shredded cheese (we like a montery jack and cheddar mix) and a sauce made with cream of mushroom soup and some spices. You mix all the ingredients together and put them into a 13 by 9 inch pan and bake it for almost an hour. Sprinkle with more cheese about 15 minutes before it's done. Bake it until the cheese is melty and the cassarole is bubbling. It's fantastic!
We also love Tuna Cassarole. It's tuna, egg noodles (you could always use penne probably, but the original recipe calls for egg noodles) covered in a mixture of tuna, mayo or miracle whip, dry mustard, and milk. Stir everything but the noodles together, then stir in the egg noodles. Sprinkle with bread crumbs mixed with melted butter and paprika. the bake until bubbly!

Whenever there's an occasion, even at Christmas, she's always made an enormous spanakopita - the traditional Greek feta and spinach pie. Her special touch is to use silverbeet (not English spinach), lots of dill and lemon and either goat or sheeps milk feta.
Here's a recipe like the one I follow but I use a little garlic too and can never get mine to taste the same as hers for some reason:

My mom and dad were terrible cooks........and busy doctors. So we snacked on the most ridiculous stuff. My dad's favourites were a tomato sauce sandwhich.......two slices of bread with dollops of tomato sauce in between. (For the indian in this group the other Dad special was a bowl full of semiyan mixed with dollops of, once again, tomato sauce). washed doesn with a cold soda to combat the Delhi heat. Yummmm. Many recipes and many gourmet meals later, these snacks have the most delicious memories of scavenging a bare fridge on a boiling Delhi afternoon, just after a much appreciated nap under the buzzing ceiling fan, or if we were lucky in front of a deliciously dripping cold air conditioner.........

My dad roasts brisket with a thick layer of chopped green chiles on top-for some reason this comes out so moist and flavorful, we all cook it this way now.

This is my mother-in-laws recipe. They are SUPER yummy, really easy, and fairly cheap to make. i have altered it slightly, and actually dh says they're even better now. i give you the original recipe, with my alterations at the bottom.....
Creamy Chicken Enchiladas
3-4 chicken breast, boiled, then cool and shred*
1 small can green chilies
1 medium onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
8 oz. shredded monterey jack cheese**
2 cans green chili enchilada sauce***
2 tbs. butter
tortillas
sour cream
salsa
olives
in sauce pan saute the onion in butter, add soups, chilies and 1 can of enchilada sauce, bring to boil, add shredded chicken, lower heat ans cook for 5 minutes.
put tortillas in microwave to soften for about 45 seconds
place about 2-3 tbl. of chicken mixture in tortilla and roll, place in baking dish. cover with other can of sauce and cheese.
bake @ 350 degrees for 30-40 min.
garnish with salsa, olives and sour cream
*for a little more flavor i either boil them in chicken stock, or cook them in the oven with a little salt, pepper, and garlic powder. if i'm feeling really lazy, i'll just get a rotiserrie chicken at the store/deli
**i usually add more cheese, and i mix regular jack with pepper jack cheese
***i use one can of regular green chili enchlada sauce, and one jar of really good green salsa, pica de gaillo, or salsa verde. it definitely adds alot more/better flavor that way

hamburger macaroni goulash
saute hamburg together with diced onion ,peppers, and celery.
cook up some elbow macaroni.
Add the cooked macaroni to your Saute pan . add some spaghetti sauce and stir it up.
