Eat healthily with lots of veggies, lean meat and complex carbs and exercise, you will not have problem losing some weight and fats. Lose that 100 lbs slowly so that you will not have sagging fold of skins. Brisk Walking can help tone up your body.
I am on low carb, low fat, high fibre, high protein and a hour brisk walk 5 times a week, and I have lost 31lbs and reduced my cholesterol, triglycerides and high blood pressure tremenduosly. I am now maintaining my 108lbs for more than a year. My family is on a similar diet.

Lots of smart cooking is just planning a little bit, making sure you are in control. Before you start: Run a sink of soapy water, ready and waiting for spills and dirty prep dishes. Gather all your gear, and all your ingredients, then you know you have what you need. Set up a very small work area between the sink and the stove somewhere. This is the area of your kitchen where you need to be the most. Have a plan for trash, maybe you move THE trash, maybe a bowl, maybe the second basin of your sink...for melon guts, packaging, trimmed items. You also want all your gear and ingredients here somewhere, off to one side, and as you use it, move it to the other side, or the sink, or whatever. If you are less experienced, or want even more control, then you can also measure everything, clean and trim everything before a single pan is heated up. Some do, some don't. For your cleanup, use stolen moments while the mixer is working or while the meat is browning to put things away, or rinse your dishes, or wipe down your counter. Get your stuck-on pans and dishes soaking before you sit down to eat. If you don't use formal serving dishes, maybe plate up at the stove and move your extra into tupperware so your pots and pans can soak before you eat. As for cooking ideas, recipes etc, stick with simple ingredients, simple recipes, versatile gear that is easy to take care of. Learn about your food families, and cooking methods, and basic skills like measuring, using a knife, prepping basic ingredients into a dish. Then you have the skills to follow a recipe, or go out on your own without a recipe.

If you have no clue, maybe you and your wife can take a healthy cooking class together. It may be fun! Also, you can go on Amazon and find a book. Also, you may want to get a foreman grill--that is the only way I have ever been able to cook edible chicken. good luck :O)
