Here is my favorite kind! I used to serve this at my restaurant, I called it "super grilled cheese"!

GRILLED CHEESE SUPREME

8 slices whole wheat bread
4 (1 oz.) slices Cheddar cheese
1 med. tomato, seeded, chopped
4 slices bacon, crisply cooked, crumbled
2 tbsp. shelled sunflower seeds
4 (1 oz.) slices Monterey Jack cheese
butter

Heat griddle or skillet to medium heat, 340 degrees.
To assemble sandwiches, top each of 4 slices of bread with 1 slice Cheddar cheese and 1/4 of tomato, bacon and sunflower seeds. Top each with 1 slice Monterey Jack cheese and bread slice. Spread butter on outside of each slice of bread. Place sandwiches on griddle; grill on each side until golden brown and cheese is melted. Makes 4 sandwiches

Learn the basic skill and go from there. Here's the deal:

1) Butter both sides of your favorite bread. (You get more out of the sandwich if it's whole grain.)

2) Heat a lightly oiled pan until just too hot to touch with your finger--don't over-heat the pan--no smoking or "odor," please!

3) Place a bread slice, butter-side down, in the pan, and then your thin slices of cheese so that none go over the edge, and then the second piece of bread, butter-side up, on top of that. (Don't walk away from grilled cheese sandwiches...they cook quickly. Check the underside while cooking. Turn down heat if edges--and not the whole slice--is browning or turning dark.)

4) Carefully flip once the cheese has begun to melt: this holds the sandwich together. Otherwise, it is cooking too quickly because of the heat.

****Muenster cheese makes a wonderful grilled cheese sandwich!*****

You can add whatever you like once you know how to work the sandwich-thing. You can add tomatoes, chopped scallions, dried dill, a smear of salsa, etc. Your tastes and imagination are your keys.

Turn your pan on medium heat. Grease the pan with butter. Place sliced real cheddar cheese between two slices of bread and place in pan. Turn ocassionally. Cook until cheese is melted and bread is toasted to perfection. For fun variations add a slice of tomato with cheese on both sides. Or some bacon and tomato. I like to serve with a side dish of salsa for dipping or warm cream of tomato soup.

butter one side each on two slices of bread.
put them butter side down in skillet on med-high heat
Place a slice of cheese (whatever you prefer) on each slice of bread.
Wait for the cheese to start to melt, keeping an eye on the buttered side of the bread.
If it starts to get too dark before the cheese melts, turn the heat down.
When the cheese gets good and melty, squish them together and eat!

Just butter the outside of two slices of bread.
Put cheese slices on the unbuttered side.
Put the other piece of bread on top of the cheese.
Put the sandwich in a skillet and cook it on medium heat till it is the brownness you want it.
Keep a close watch on it so you don't burn it.
YOu can use any kind of cheese, velveeta, kraft singles, cheddar, colby, cojack, any of them work. Experiment with different ones to find out what one you like the best.
