If you are trying to make a meringue use the blender and make sure everything is cold and very clean. If you are just making scrambled eggs or whipping them for a recipe that doesn't need them to be peaked then a fork will do.

You can do it in a food processor, but if you do not have a whisk or a hand mixer you probably don't have a food processor either. Go to Walmart and buy an inexpensive hand mixer because you will find out that you will use it for a lot of other things in cooking. Wire whisks are about 3 dollars it's a much slower process, but you can use one. BORROW ONE!

I was trying to make a spinache soufle. I only have a blender. My egg white never peaked or frothed even. I added some cream of tartar and nothing happened..then I added cold water and nothing happened. I think getting a cheap hand mixer is a good idea. They come in handy for many baking and cooking needs.

IF you’re trying to make meringue, your best bet is the hand blender. It has to be absolutely clean. No food or fat of any kind - including butter or egg yolks - can be on any of the metal parts. If there is, you’ll never whip those egg whites to a froth or any size peaks.
It also helps a lot if you put the hand blender and the bowl you'll be using to mix the egg whites in the freezer. The bowl has to be absolutely clean as well as the hand blender.

I'd use a hand blender. Forks won't give you the texture you're probably looking for and regular blenders don't incorporate air necessary for the whites to get stiff. A hand mixer on high will do the trick!

The hand blender should work if its electric. You really need a mixer so you can do it correctly. It will take a little longer with the hand blender .
