Couscous - tabbouleh - grilled garlic and pita bread - maybe some fried pumpkin or mashed Yams - I really like Lamb best with Middle Eastern influenced sides. Good Luck!

Mashed potatoes with spring onions(this is called champ) or you could saute the leeks and add them to the potato. Some green beans or snow peas. Ratatouille goes really well with lamb. Here is my way to make it - but I also add mushrooms...
Ratatouille
Ratatouille, a French eggplant and vegetable dish is usually made vegetarian, but is often served with meat. Why not make this vegetarian and vegan ratatouille recipe and serve with rice or pasta instead? Or, layer on lightly toasted French bread for a vegetarian ratatouille sandwich.
INGREDIENTS:
1 tbsp olive oil
1 large onion, diced
1 bay leaf
4 tbsp dry red wine
1/2 cup tomato juice
4 - 5 cloves garlic, crushed
1 tbsp dried basil
1/2 tbsp dried marjoram
1/2 tbsp dried oregano
dash of ground rosemary
1/2 tsp salt
1/2 tsp black pepper
1 zucchini, sliced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 eggplant, cut into small cubes
2 large tomatoes, cut
5 tbsp tomato paste
PREPARATION:
Heat the olive oil in a large saucepan over medium heat. Saute the onion until translucent, about 5 to 7 minutes.
Add the bay leaf, wine and tomato juice and stir well. Then add the garlic, herbs, salt and pepper and mix until well blended.
You can omit the wine if you desire and substitute it for chicken stock.
If you want a kick, add some chilli or Tabasco.

Mashed potatoes with leek chopped up in them are great with lamb.
Any eggplant dish too.

Lamb chops, mint marmalade, nutmeg mased potatoes.
Season lampb chops with salt, pepper, nutmeg, then grill them to whatever doneness you like. Serve with mint marmalade and nutmeg mased potatoes. You can look up recipes for those on the internet

I like to fix it with mint jelly and roasted potatoes, baked squash, or mashed turnips with carrots , also two vegetables and a tossed green salad. Pita bread or sour dough French bread rolls. And with the dessert a mint tea.
