I can't really say missing. For the most part the Old Testiment was taken from the Torah. As for the New Testiment, it was not given by God, nor was it written by him. The New Testiment was put together and created by Emporer Constantine and the Council of Nicea in 365AD. There were literally thousands of texts having to do with the reform of judaism, christianity, and other subjects. From these the Coucil of Nicea chose which one would make up the New Testiment of the Bible as people know it today. Some of the books were also altered, and different aspects were added to them. As an example, the name Lucifer was originally Etruscan, which was added and used to replace certain other beings in the bible. At the same time, the name satan and the concept of hell was added to the belief, partly as a scare factor, and partly to add an aspect of an adversary to God to make it more interesting for the readers. The word Satan actually means adversary in hebrew. Originally what we call the devil was an archangel that was sent by God to test the faith of people, and see if it could corrupt them name Samael, along with another being known as Aporyllon who the modern devil is based on. Aside from what we have in the bible, there are many Apocryphical texts considered to have been removed from the original sources, along with the Gnostic texts, and many many more other writing. Some of these writing are thought to have been written by the disciples of Yeheshuah, some of them by the man himself, and others by people in Israel at the time.

Google the phrase Gnostic Texts, or Nag Hamaddi Library. Those are some of the "missing" books.
