I cooked beans and I put the lid on top and set it on a table to let it cool down before putting it in the fridge, the problem is i forgot to put them in the fridge and so it was left over night.
I checked them right now and they smell rotted, but look fine.
Can beans be saved? Like if you drain the beans and put in fresh water and some baking powder, and recook them. Does that work? Or do I just have to throw them away?

The beans were just boiled, so basically... salt, water, beans. Simple cooking.
THE PROBLEM. I left that pot on the oven overnight (forgot to put it in fridge). So it smelled rotten in the morning when I checked on it.
I know the food danger zone is 4hrs, then toss the food away, but my mom INSISTS you can save beans with a new pot, baking powder and water and re boil them.
But I am studying to be a chef and I can't convince her, they should be thrown away right??!?!?

Sorry - your mom is right although as a Chef this would never fly in a professional atmosphere (FDA and all) but folks have been rinsing and recooking beans long before there was an FDA and they will long after. There is a technique to it and as a true chef you should never be closed to learning a new technique. You will find as you journey in life no rule is written in stone just code books ~ consider at one point (no too long ago) Sushi was considered a health risk because it is raw. Follow your mom's instructions and see how it comes out. Good Luck!

Question for you and/or your mom:
Is anyone's health worth a pot of beans?
Even if that whole pot cost $500 or $1,000 or more, is anyone's health worth a pot of beans?
Suggestion for next time: Use your timer. Set it for an hour - the full length of time - check the beans. Cool enough? Fridge.
Still too warm? Another hour.
I did the same thing with a pot of potatoes for potato salad. I went to the store and saw an old friend of mine. A friendly chat turned into an afternoon at the "local watering hole". The potatoes were out nearly 6 hours.
When I got home, I was greeted with the smell of cooked potatoes. Without even giving it a second thought - in the garbage.
Back to the store to get more potatoes.
Did I do it again? No. I didn't go to the store - or any place else - and I used my timer.
I wish you well!
VTY,
Ron B.

THROW THEM AWAY! If they 'smell rotted' they ARE rotten, and there is no way you can 'rescue' them ... toss them out and make new beans ... but in a 'different pot' until you have washed the pot they were in ... and 'soak it' in vinegar or bleach to be SURE the 'bad smell' is TOTALLY GONE before you use that pan again. I've done that and actually had to throw the pan AWAY too ... after just 'one night' of leaving them out, accidentally.

THROW THEM OUT. They will start to get moldy even if you recook them, because the water they were soaking in is a 5-star hotel for molds, fungi, and bacteria. Recooking will not make them better. It might make them worse. The same goes with rice.

I would not eat that. Once something sits outside that should be refrigerated bacteria and other things start to grow on it. Since it was out there for a whole night the bacteria population has grown a lot and I would not consider it safe to eat. You should definitely throw it away.

Toss them. Cooking up a new pot of beans is cheaper than going to the doc and getting your stomach pumped.
*****added info *****
You need to convince your Mom. Regardless of what you do to salvage the beans, there's a good chance you'll get food poisoning.

As a student chef, you might ask your mother the difference between baking powder and baking soda. As for your beans, pitch 'em if they stink now. They are suppose to stink after you eat them.

If they fail the smell test throw em out. If you wait and see if they will poison you Keep em.
