Kostya Tzu has a cool exercise on his DVD, you get a coin and put it on the top side of your hand, hold your hand out and flip the coin in the air and then catch it
After you can do one well add another coin, and then the ultimate challenge is doing 3 coins at the same time, you flip all three in the air and try to catch them before they hit the ground, this will really test your reflexes
there is also an exercise in the shaoling martial arts book that trains your reflexes, you hang a coin attached to a string at about your eye level, then you swing the coin and let it hit the top part of your eye (not your actuall eyeball but right above it) and you have to try not to blink
Im not sure exactly because i havent been doing this too long, but i think the trick to not blinking is too slow the coin down in your mind so it doesnt seem to be going so fast to the eye, then you can kind of trick your mind into not blinking, its a very strange and very hard exercise but i can SEE :) how it would help with reflexes, good luck

A simple easy and cheap way,I like, is buy a rubber ball, about the size of your fist. Two eye bolts (lag style). And about 6ft. surgical rubber ( hardwarestore or lumber yard should have it.) mount one in the ceiling (make sure its in a wooden rafter) the other in the floor directly below it. ( if you have a concret floor you'll need a sleeve for the lag bolt and a masonry bit to drill into the concrete. make sure your sleeve and bit are the same size--diameter.)
Now drill a hole through the middle of the ball and thread the surgical rubber through it. you can tie a knot above and below the ball to hold in place, or use electrical. Tie it off at the 'eye'in the celeing and then the floor to where its ( the ball) is even with your face. ( make sure you stretch it very tight)
Pull it back and let go.If its tight enough, you will see some SPEED coming back at you(like Bruce Lee taking a swing at you) Imagine your oppoent throwing a blow at you and practise your bobbing, weaving, parrying and blocking.
This simple method will be a great help in your reaction speed and timing

Some of your explosive type exercises are very good for this. One is to do clapping push-ups and another is a regular push-up but push up so hard that your upper body and hands come off the floor several inches and then you catch yourself on the down phase. Another one is to throw double jabs and double back-fists so that the fast twitch muscles and nerves in your arm become more developed but with this one you have to be careful of hyper-extension and should hit something lightly like a heavy bag. Some weight lifting type exercises can also help develop this if you lift for speed by doing high reps-light to medium weight.

Go to a corner of your home, garage prefferably, and take a tennis ball or raquet ball with you (I like the raquetball better, since it doesn't stand out so much to the eyes, it is smaller, and it has odd balistics. Be careful because new ones could stain the wall.). Face the corner and throw the ball against one wall so it hits it, the other wall, then returns to you. Catch and throw it again with the opposite hand, switching back and forth. Once you get more confident, throw harder and move closer. It helps a lot with coordination, too, and you need good coordination to have good reaction time.
