Spanish rice. It can be made with various ingredients or you can save a lot of time and use picante sauce or salsa. Cook rice in the usual way, let rice cool to room temp. or close to it, mix in a small amount of picante sauce, or salsa which ever you prefer, add salt and pepper and then place in an oven safe dish and bake in a 350 degree oven for 20 minutes. The leftovers will keep very well in the refrigerator and will be even better the next day.
