Bavarian Restaurant Beer Cheese Soup Recipe #22344
4 servings, 4bowls
1 hour 30 min prep
1/4 lb butter
8 ounces cheddar cheese or American cheese
3 cups chopped celery
12 ounces beer
3 cups chopped onions
1 teaspoon garlic salt
1 stalk grated carrots
1 teaspoon white pepper
8 tablespoons flour
6 cups chicken stock
Sauté celery, onions, carrots in butter.
Add salt and pepper.
Blend in flour.
Add chicken stock and cheese.
Heat gently until cheese melts.
Add beer.
Adjust spices to taste.
Serve piping hot with croutons on top, if desired.

OR you can go to your friendly supermarket and buy that canned soup or canned welsh rarebit. You may have to go to a gourmet food shop for this.

Welsh rarebit is better. You can go on the web and get a recipe for that.

Cheese Fondue is a great dish to make also.

I've had a rarebit made with cheddar and beer that was really good. Here are couple of web sites that have recipes. I no longer have the one from yrs. ago.

Heck yeah! And I used to serve it at my restaurant all the time to rave reviews. It's creamy, cheesy, yummy, and sausage-y. It's the perfect soup for cold winter nights. It's so good. I got my recipe straight from Hillshire Farms. Email me if you want it.
