Because organized creationism is all about lying. It's really the only strategy they've got, and being devoutly religious, creationists have already abandoned the notion of truth, so it doesn't bother them morally to lie.

Yes, I agree that creationists (and evolutionists) should not dishonestly quote "authorities". Personally, I don't see how Darwin's "reasoning" is any kind of proof for anything... either for or against creationsim.

It's the evidence that counts. I want to see the evidence. I don't trust the "advice of experts".

Why does anyone misquote or partially quote anyone? To obtain what they want from it, of course.

Albert Einstein did say "God doesn't play dice with the Universe", but few people ever mention that he later retracted that statement and apologized for ever having made it.

For the same reason that atheists take Bible verses out of context to prove that Christianity is wrong. They don't have a REAL argument, because you can't prove it either way, so they resort to treachery and deceit to "prove" they are right. It is a desperation move. Everyone does it when they don't have a real argument.
