MACARONI, CHEESE AND GROUND BEEF

1/4 to 1/2 lb. cheddar cheese
2 boxes Kraft macaroni and cheese dinner
1 1/2 to 2 lb. ground beef
1 lg. or 2 med. onions, chopped
1 sm. clove garlic or 1/2 tsp. garlic salt

Cook and drain macaroni and prepare according to box directions and add 1/4 cup to 1/3 extra milk.
In separate skillet, brown ground beef with onion and garlic.

Put in a casserole dish and top with shredded cheese. COVER and bake for 20 minutes at 325 degrees, until cheese bubbles.




Skillet Beef and Shells

A quick and tasty weeknight meal.
INGREDIENTS:
2 cups cooked pasta shells
1 to 1 1/2 pound lean ground beef
1 medium onion, chopped
1 small green bell pepper, chopped
1 can (14 1/2 oz) tomatoes, chopped
1 can whole kernel corn, drained
1 can Nacho Cheese Soup
salt and pepper to taste
PREPARATION:
Brown beef with onions; add green bell pepper and cook for another minute. Add tomatoes, corn, soup and pasta, Mix well; taste and add salt and pepper. Cover and simmer until hot.
Serves 4.



Cheeseburger Macaroni

1 lb lean ground beef
1 tablespoon dried onion flakes (optional)
3 1/4 cups water
3/4 cup ketchup
2 teaspoons prepared yellow mustard
12 ounces macaroni
1 lb Velveeta reduced fat cheese product, cubed

Brown ground beef and onion in large skillet; drain well.
Whisk together water, ketchup, and mustard in a bowl. Pour over meat and bring to a boil.
Add macaroni and turn heat to medium low.
Cover and simmer for 10-12 minutes or until macaroni is cooked and almost all of the liquid is absorbed.
Stir in cubed Velveeta cheese until melted and distributed evenly.




Hamburger Medley Macaroni

Ingredients

1 - 28 oz can Whole Tomatoes
1 lb Ground Beef, extra lean
1 cup of Macaroni (uncooked)
3 tbsp Salsa (or to taste)
1 tbsp garlic (or to taste)
1 tsp chili powder (or to taste)
2 chopped green onions
1/2 cup sliced fresh mushrooms


Brown beef, onions and mushrooms. Drain. Cook pasta til tender to taste. Add beef mixture to cooked pasta. Add remaining ingredients. Simmer to hot throughout.

You may need to add a a tsp or two of water to keep a slight liquid sauce. Or add ketchup/spaghetti sauce as an alternative.

You can add or delete ingredients according to your taste. Serve with a green vegetable!

Enchiladas: 6 large flour tortillas 1 lb. ground beef 1 onion (chopped) 16 oz. salsa 16 oz. tomato sauce 1 C. water 1 small can diced green chilies 3 C. shredded cheddar cheese Brown beef and onion together along with 1/2 of the can of the green chilies. In a separate bowl combine the other 1/2 of the chilies, tomato sauce, water, and salsa. Pour half of this mixture into a 9 X 13 casserole dish. Put 1/6th of the meat mixture into a flour tortilla along with a handful of cheese. Roll up and place into casserole dish. Put remaining sauce over the top, put the rest of the cheese on top and bake at 375 for about 35 minutes or until the cheese is golden and the sauce is bubbly. Enjoy!

The easiest way to do it is make a box of macaroni and cheese (follow the directions on the box), then add half a pound of cooked ground beef.

Or, if you want something a little more elegant and hearty, try my faux goulash. Boil 2 pounds of elbow macaroni until al dente. Drain, put in 1 large can tomatoes, 2 good sized fresh tomatoes. Add 1 to 2 pounds cooked ground beef (depending on how meaty you want it). Season liberally with oregano and salt/pepper.

1 box elbow macaroni or Ziti
2 tbsp. vegetable oil
1 lb. ground beef
1 tsp. salt
1/4 tsp. pepper
1 small chopped onion
chopped celery
chopped green pepper
1 jar red spaghetti sauce

Cook macaroni according to the directions on the box.

In a large skillet add oil. When oil is hot add the rest of the ingredients, except the sauce. Cook until meat is browned. Add sauce and cook for 5 minutes more on low heat. Toss with cooked macaroni.

make mac and cheese from box then add ground beef and then add some salsa or canned tomatoes.....mmmmmm yummy!
