Unshucked and moist in a brown paper sack about 5 or 6 days before getting tough. If you put it in the fridge it dries out quick and should be used not later than the next day. It is always best to pick it when you are gonna cook it as it stays fresh on the corn stalk.

Sweet corn will last a few days in the refrigerator. Sweet corn has a lot of sugar in it and when you pick it, it starts to lose some of its sugar content. Leave the shuck on it until you are ready to eat it.

Sweet corn begins to convert the sugars to starch as soon as it is picked,so the quicker you cook and eat after picking the better.If you can't cook the day it's picked,cook by the next day.Even super sweet hybrids lose a lot of sweetness overnight.Old timers used to get the pot boiling before they went out to the garden and picked the corn.

Kevin, if you have planted your own corn, leave it on the plant until the pot is boiling on the stove. Some farmers actually build a fire next to the corn rows and don't cut the corn until they have it dipped into the pot. Either way, it's incredibly tasty that way. Nothing you get in the stores will compare.

An 80 yr old man and his wife were driving through the country one Saturday and saw fresh corn for sale.
She told her husband to stop, that a friend told her how to keep corn fresh.
Put it in a condom and freeze it.
They bought a dozen and on the way home she told her husband to buy a dozen condoms.
He went into a drug store and did.

On Sunday, the wife was preparing the corn and found that the package of condoms contained only eleven, one short.

She told her husband to go back to the drugstore on Monday and get the missing condom.
He walked in and the same man was there.

"Do you remember me? I was in here on Saturday and bought a dozen condoms"?
"Sure I remember you".
"Well, there were only eleven in the package. It was one short".
"OH! No problem, Sir. I'll get one for you".

He handed it to the old man and he began to walk away.


"SIR! SIR! I hope I didn't ruin your weekend".

It starts to loose freshness immediately after it is picked. It is best to shuck it as soon as possible and then put it in the fridge - then it will last a few days.

You can also shuck it, wrap it tightly in aluminum foil and freeze it. It will be edible months later if you do this.
