Yes carp is very good. If you roast some vegetables and season the fish with your favorite seasonings and add a little bit of lemon, garlic and, thyme. Them you grill the fish to your preferred cooking then crisp the skin lightly and serve.

Its delicious when its made right.
Like every other food from every part of the world, there’s a right way to make a dish and then there’s the wrong way to make that same dish.
If someone doesn’t know what he/she is doing or how to do it, they should ask questions and/or do research.
One of the many ways to prepare carp is how the Jewish people use carp:
The whole carp is scaled, filleted and boned. The fillets are put in a grinder and ground up - just like hamburger. The ground carp is put in a bowl or a pot and other ingredients are added:
eggs, matzo meal, salt and pepper. Everything is mixed together.
The fish bones and heads are put in a pot. THAT pot is put on the stove to allow the water to come to a simmer. As the water is heating, it turns that water into a fish stock. The carp mixture is made into oval or football-shaped patties. Those oval patties are gently put in the pot with the heads and bones. Those patties simmer for a few hours. When done, the patties are allowed to cool.
Those patties are put on clean pans and put in the refrigerator to chill. The next day, the patties are ready to eat with fresh-ground horseradish - red or white. It is a delicious dish.
If you ever hear anyone speak of “gefilte [pronounced “gih” (as in ’’give’) fill tuh (as in ‘tough’) fish”, you have a pretty good idea what they are talking about.
Gefilte fish can also be made with white fish, pike or other types of fish. OR the different fishes are mixed together.
When its made the right way, this is a very delicious dish.
I made it many times. I ate it many more times.
I wish you well!

Ron B.

My mom used to make carp for the holidays, she would grind the fish with a few other varieties, adding eggs and onions, and make fish balls. They were delicious!
I've also had carp served in chinese restaurants, and it was delicious, just served up with a tasty sauce on the side. Yes, there are bones, as in most fishes, but the flavor was and is wonderful.

Carp was originally imported into North America by the Chinese as a food fish. It has been raised and used for food for centuries.
It has gotten a bad rep in the US because it spreads quickly in the wild and competes with trout and other "game" fish.

I've only tried carp in Chinese restaurants and it was served whole. The only downside I found in carp was all the little bones. The taste was actually good. Nothing terrible tasting about it.
In the restaurant, it was fried and served with oil, ginger, garlic and green onions.
