Cook the white rice until it is partially done. Mix the rice and vegetables together and bake until the vegis are done. Melt the velveeta on top. It makes a nice casserole.

Well you have a lot of great ingredients to work with so this won't be as difficult as you think.
Poach the chicken until it is thoroughly cooked...you don't want any raw chicken.
then I would sautee the garlic until it is golden brown in a little olive oil and add all of the vegetables. cover your pan and let the vegetables simmer in the pan for around 10 minutes.
cook the pasta (which ever one you like) in salted water with a few drops of olive oil in it.
mix the vegetables and and the pasta and the sliced chicken together.

if you have some white wine and basil and olive oil, mix some of those together with chicken and add a little bit of garlic and throw some broccoli in it over the angel hair pasta or the bow tie would be good too. you don't even have to use the wine, just use the others. it'll make a good light pasta dish.

Got any olive oil? If so then you could throw the carrots, broccoli, garlic, together with some pasta, and salt and pepper and even add chicken to that...
I would completely forget about the velveeta (icky, and UNHEALTHY!!)
You could also do the corn as a side veg and then bake the fish and do a garlic butter sauce to put over that...Just melt garlic and butter together and pour it over the fish.

Cook broccoli until tender, cut up chicken into small chunks and cook in skillet until completely white, boil noodles until tender, then mix all into a casserole dish and add sliced up velveeta and a little milk (1/4 cup or so) bake in oven at 350 stiring occasionall until the cheese is all melted and covering pasta mixture. yum that sounds good! Add any seasonings you would like too!

Chicken with Brown Rice.
Sear chicken breast in large covered pan/pot. Set aside, add onions (if you have), garlic, sliced carrots then add 1 c brown rice saute till rice turns chalky add canned tom (if you have)and/or water (enough liquid for the rice). Season with salt and pepper and add the chicken and juices back to pan. Bring to boil, reduce to simmer and cover. Cook for 40-50 minutes Add peas and/or broccoli either 15 minutes before done if frozen or fresh, mix in if canned

Its Veggie Chicken Fried Rice Night!!
Take the chicken - cube and sautee in butter or olive oil with garlic, and other spices you enjoy ( i would do red pepper flakes, Salt and pepper, and soy sauce if you have it)
While you are sauteeing the chicken boil rice of your choice (i would pick brown - more filling and better for you)
Chop carrots, and broccoli in bite size pieces and sautee with peas and corn (same method as chicken) - adding carrots and broccoli first since they take longer to cook...cook till tender but still have bite
Throw all of it together in a big pan and sautee cooked rice, sauteed chicken and sauteed veggies quickly to combine and develop flavors - lots of garlic, spices and soy sauce here too!
Plate and serve! Easy delish and LOTS of food!

Take your chicken pan sear it with some fresh garlic and any other spices you like
Then take the rice, carrot (chopped), peas, and maybe even corn. Place them in a slow cooker with 2 cups water per cup of rice and 1 tsp salt per 2 cups of water. Let is slow cook until tender. If you have them then throw some chicken bullion cubes in with it.

you can make a lot of casserole-type side dishes out of the velveeta, veggies and pasta/rice (your choice) if you're really desperate, chunk up the chicken and throw it right in the mix. not too much to do w/ the fish without butter
