I know that wedding cakes are made in advance, usually a few days to a week, of the wedding day. I'm wondering if there is something unique about a wedding cake recipe that differs from a typical cake recipe so that the cake stays moist for so long. We're looking for a great chocolate wedding cake recipe if anyone as any! THANKS!

Each recipe is tailored to each baker. If you have someone telling you that the cake is made a week in advance, then you should find someone else to make it!! Chances are a cake made that far in advance is then frozen and defrosted cake does not taste good at all. Any cake recipe should be fine ... and if you want to do a search on food network or something that might work. Make sure you find a recipe that uses sour cream ... I know it sounds bad, but it makes the cake VERY moist and your guests will love it!!

I hope your baker isn't making your cake a week before hand. I have never heard of any place that makes a cake that soon before a function.

To answer your question, no there is no real difference although you can choose what kind of cake and icing etc you want. Lots of brides are choosing different types of cake beside the plain white, yellow or chocolate.

They are really just cake! What we did was order a small wedding cake for 10 people for the cake cutting ceremony, but bought sheet cakes separately for the desert... we save a lot of money that way!

If you have a fruit cake they generally "feed" the cake with something like brandy to keep the cake moist. I'm having cup cakes, it is just a normal chocolate sponge mix, and as it is being made the day before the wedding it will be perfectly moist on the wedding day itself. If it is chocolate sponge that you are having then I would say it is just the normal cake mix, whatever your baker's standard mix may be.

I took a cake decorating class once and learned what makes the cake stay so moist is you seal the cake with a thin layer of frosting thinned with a little water. This way the caked is sealed and air isn't able to dry out the cake.

To people who think their wedding cake is baked the day before the wedding - IT MOST LIKELY IS NOT!! It's probably baked on Tuesday or Wednesday...then a few days of decorating.

No. The only difference is the wedding cake costs a LOT more.
Anything with the name "wedding" attached to it is double the cost.
When you rent the hall, tell them it's an anniversary party. You'll get charged half for the same services.
When you book the caterer, tell them it's for a retirement party. You'll get charged significantly less per meal.
Make your own cake or have it made by someone just starting in the business that charges a lot less. There are plenty of ladies out there that do this part time out of their kitchen and charge half or less (or even only a few percent) of what the professionals do and there is no distinguishing the cake.
