It all depends on the type of engineering you want. Typically someone like a design engineer works days, however there can be opportunities in a manufacturing environment where you can work nights or weekends supporting production.

Depending on the industry, this could be as a mechanical engineer, electrical engineer, chemical engineer or even an industrial engineer. These positions may not be as plentiful as others, but they do exist and can be quite rewarding as you tend to be more autonomous / independant.

I have worked nights & weekends for many years supporting various types of production machinary and processes in high tech industries.

It is very rare to see design engineers working a true night-shift. If you become a production or manufacturing engineer and work at a factory that operates around-the-clock, then you could get a night-shift job.

Many companies offer flexible schedules.

It depends on the job. If you are a highway engineer working on roadways, then most of the work is at night, so as not to impact traffic. The same is true for such industries as utilities (gas, electric, etc.) that need round-the-clock monitoring and repair. Best bet, though, is to create your own company and accept jobs that allow you to work according to your own schedule.
