Whats a good dessert thats easy to make? I wanna make something special for my moms birthday.

It's not incredibly easy...but very good and very rich is chocolate chip cookie dough cheesecake. Make cheesecake as normal with crushed chocolate cookies mixed with butter for the crust and then make cookie dough (or take shortcut and buy some) and break into little chunks. Sink into cheesecake mix until completely covered. Bake and then top with some extra chocolate chips....people go crazy for this!

this is incredibly easy and delicious!!

12 oz cool whip, thawed
8 oz sour cream
3.4 oz box instant vanilla pudding
9 in. angel food cake or pound cake, cubed
2 pints blueberries
1 1/2 pounds strawberries, sliced

In a large bowl, mix the cool whip sour cream and pudding mix together. In another large glass bowl, put some of the cubed cake in the bottom, top with the cool whip mixture and then layer the fruit on top. Repeat layers until you have no more room or you're out of ingredients.

You can use any kind of fruit you would like. You can even change the pudding mix to whatever flavor you like (chocolate, banana, lemon, etc.) Its a very pretty and tasty dessert.

Make a chocolate cake (box kind is fine) - I prefer to make 2 rounds instead of 1 flat so I can put a filling... Use whipped cream or cool whip for the filling and put some strawberries in the middle as well. I like to put a little sugar on them after cutting them and mixing it in a bowl because it makes a little bit of a syrup. Top the cake with more whipped cream, and make chocolate dipped strawberries to put on top. Melt chocolate (you can use chocolate chips - be careful not to burn - microwave in a bowl for only a few seconds at a time and stir, repeat until completely melted). Once chocolate is melted, dip whole washed strawberries into the chocolate, leaving only the top near the stem uncovered. Lay them on a baking sheet covered in wax paper, refrigerate until the chocolate is firm. They look really pretty on top of the cake and taste great too!

Coffee Whip Dessert

1 c. water
2 tbsp. instant coffee
6 1/2 cups miniature marshmallows
1 c. heavy whipping cream
Whipped cream

In a large saucepan bring water to a boil. Remove from heat and stir in coffee. Add marshmallows. Cook for 5 to 6 minutes over low heat until the marshmallows are melted, stirring occasionally. Pour into a large bowl. Cover and refrigerate until slightly thickened. In a small mixing bowl, beat the cream until soft peaks form. Fold into the marshmallow mixture. Spoon into dessert dishes and top with whipped cream. Serves 8

Or you can make banana splits.

If you aren't a great baker, there are lots of pre-made cakes and pies that you can buy frozen and then spice them up a bit with extras. If your mom likes chocolate, you could try a choc cake, and then use premade frosting out of a can. To make it special, you could add a layer of raspberry seedless jam in the center of the cake, and pipe whipped cream on the top.
Whatever you do, I know your mom will appreciate it. It's not what you make, but the effort you make to do it that makes it so special for us moms!

Here's an awesome recipe for a Chocolate Trifle. Super easy to make and is always a crowd pleaser whenever I make it.

INGREDIENTS
1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy
DIRECTIONS
Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

I haven't made it in a while. But a few times I've taken a red jello (usually strawberry-banana), a light colored pudding such as vanilla or banana, and a green jello (lime), and made parfaits with them.

Make one of the jellos and pour them into the glasses or dishes that you are using and let that set. Then do the same with your pudding, and again with your other jello. Afterwards, if you like, you can top it with whipped cream and maybe even a cherry.

Something easy?
Well... I usually get some ice-cream into a mug, sprinkle some chunky jellies on it and pour some chocolate syrup over it all.

That's easy... but I don't know if its special, lol...
You could try replacing jellies with crushed biscuits, perhaps try something totally different? Use maple syrup instead? Hahaha... hope you find a good dessert :-)

a REALLY desert is: jello pretzel salad
2 2/3 cup of crushed pretzels
3T sugar; 1 cup sugar
3/4 c magarine
8 oz. cream cheese
4 oz. cool whip
1 lg. package strawberry jello
2 cups boiling water
16 oz. frozen strawberries

cream sugar and margarine. add pretzels and press into a 9 by 13 pan at 350 degrees for 10 min. cool. mix cream cheeese and rest of sugar and blend. add cool whip and blend. spread over cooled pretzels. dissolve jello in water.add strawberries. partially set and pour over cream cheese filling. fridgerate al least 7 hrs.

buy a angel food cake already made - cut it in half lengthwise - slather the bottom half with cool whip, set the top half on top - finish the top half the same way then decorate the top of the cake with blueberries & strawberries.

easy and light.
