I have been making nachos lately out of red, yellow, and orange bell peppers instead of chips. Just slice the peppers into little "boats" and put taco meat, green onions, diced avocado, tomatoes, and cheese (of course) and bake for 30 minutes. Add sour cream, salsa, or whatever you like. These are really, really good.

It's more of a dip than nachos.
Coarsely dice up an onion, marinate in a mixture of salt pepper lime and tequila for an hour.
Slice up 4 or 5 avocados (big ones).
Take a can of corn and put it in a hot pan just to roast it a little. add to avocados.
Saute the onion until they are translucent. Add to corn and avocados.
Chop up some cilantro and a jalapeno and add to mix.
Baby you got an avocado dip goin.
Add some griled chicken if you wish.

Tostitos has a monterey jack queso that is AwESOME!!! Better than most restaurant quesos. I usually just make some ground beef with taco seasoning, I sprinkle some chips warmed in the oven with the meat and then pour the heated white queso all over the chips. I serve it with salsa and sour cream on the side. Not much of a "recipe" but it always goes over great when we have company over.

I just make my own with what I have... I spread the chips out on a plate that can go in the oven or a baking pan, cover with beans, meat if I have it (usually left over carne asada from tacos - I marinate skirt steak in Tampico with some onion and cilantro and grill - yum!), sometimes some grilled onions, lots of cheese on top (I like to mix cheddar & jack or pepper jack). Once it's all warm and the cheese is melted, pull it out, top with sour cream, guacamole, and tomatoes... maybe some jalapenos and either some salsa or Tapatio hot sauce.

Nacho Dip I
INGREDIENTS
* 1 (8 ounce) package cream cheese
* 1 cup sour cream
* 2 tablespoons taco seasoning mix
* 3/4 cup salsa
* 3/4 cup shredded lettuce
* 3/4 cup shredded Cheddar cheese
DIRECTIONS
1. Combine the softened cream cheese, sour cream and taco seasoning on a large plate or in a pie plate. Spread the salsa on top of the cream cheese-sour cream mixture. Top with lettuce and cheddar cheese.

My boyfriend loves to experiment with nachos. we get the tortilla chips spread them over a plate. add a layer of Mexican 3 cheese blend thats already graded. then add more chips and more chesse. and add anything you like olives, salsa, beans, shredded chicken and put it in the mircowave until the cheese melts and enjoy warm crispy nachos. you can add sour cream and guacamolie on top.

The one that I like is really easy to make, you just take a can of Rottell Tomato's and put it in a pot and then head it and add Velveta Cheese to it until the consistancy is how you want it. You can add a little water so it's not so thick if you want. That's what I like, anyways! Kinda boring for some, though, I think!

1 pound process American cheese, cubed
4 green onions, sliced
1 medium tomato, chopped
DIRECTIONS
Divide chips between six plates; set aside. In a saucepan, warm chili until heated through. Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with onions and tomato.

Bean Dip
i usually make the following with ground venison, but you can make the following with any ground meat/poultty:
1 - lb of ground meat
1 - 12 oz can of refried beans
1 - 10 oz jar of cheese (usually sold in the aisle near the refried beans)
- brown the ground meat up in a skillet. drain any fat.
- add the refired beans and mix in. the refried beans will loosen up as it warms.
- add the cheese and mix in.
use any nacho or corn chip that you like to dip with.
