buttercream frosting:
this is the recipe for wiltons frosting. my mom used to work in a bakery and it is the only frosting we use when she makes homeade cakes. its delicious.
1/2 cup solid vegetable shortening
1/2 cup butter or margarine, softened
1 teaspoon Clear Vanilla Extract
4 cups sifted confectioners' sugar (approx. 1 lb.)
2 tablespoons milk
In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.
YIELD: Makes about 3 cups.

Here's my kids' favorite:
Cari's No-fail Buttercream Frosting
Ingredients:
2 lb bag of confectioner's sugar (10X)
1 stick of butter (salted is best)
1/2 cup crisco (solid vegitable shortening)
2 tsp vanilla
2 tsp lemon juice
Whipping cream (appx 1/4 cup total)
Directions:
Cream butter (at room temperature) and Crisco with a hand-held mixer (or a stand mixer if you have one). Add vanilla and lemon juice. Then add confectioner's sugar 1 cup at a time until the icing is very stiff. Add whipping cream a tablespoon at a time until you reach the desired consistency.
TIPS:
** Do not use not butter flavored Crisco. It is yellow and your frosting will be yellow. If you like, you can add 1 tsp of imitation butter flavoring (found next to vanillla in the spice isle).
** You will need anywhere between 2 tbsp to 1/2 cup of whipping cream depending on the desired consisency and the humidity in your area. I live in a very humid environment and so I do not need very much cream to reach the consistency I need to frost cakes or cupcakes.
VARIATION:
** You can substitute 1 pkg of cream cheese for the crisco for a cream cheese frosting that is great w/spice cake or carrot cake.
** You can also substitute 1 cup of cocoa powder for confectioner's sugar for a chocolate buttercream frosting.

If you really want a good buttercream, go to foodnetwork.com and look up Buttercream and Alton Brown.
He has a recipe for buttercream icing that involves whipping up eggs, dropping caramel in them with a turkey baster (while in the mixer) and then gradually adding butter cubes to get the perfect buttercream frosting.
From the show it looks incredibly easy to use and spread, but not easy to make. The vanilla or whatever flavor you like can be added at the end when it's ready.

FRENCH VANILLA FROSTING
1 c. milk
3 tbsp. flour
Make a white sauce of above. It will be very thick. Boil for 1 few minutes. Cool completely.
1/2 lb. (2 sticks) butter
1 c. granulated sugar
2 tsp. vanilla
Cream butter. Add sugar and vanilla. Combine white sauce and beat at high speed on food mixer for about 5 minutes. perfect for cupcakes:) then you might have some left over

About 2 tbsp. milk
Blend butter and sugar. Stir in vanilla and milk. Beat until smooth and of spreading consistency.

I'm of the school that you can't go wrong with a cube of butter, a box of powdered sugar, and a tsp of vanilla! Add more powdered sugar to thicken your frosting and beat well!

Hard to go wrong with good old butter-cream.
Use soft room temperature butter and use your hands to squish in powered sugar. Just keep squishing and adding sugar until it is the consistency/sweetness you want. Add vanilla extract to taste.
