use softened cheese instead of cream cheese? (or is it the same?), if I use slightly less than 8 ounces and if I use vanilla flavouring instead of vanilla extract?

You can do it, but the result will not be the same.
I am not saying you will not like it, just that there is a difference.

Yes, it matters. Cream cheese or ricotta is the essence of a good cheese cake. If you have cottage cheese, however, run it thru a food processor to break down the clumps, you might be able to create a nice cheese pie of sorts. Vanilla extract has a richer flavor than vanilla flavouring and is what holds up better in most recipes.

i have made many cheesecakes using different ingredients. if you have never made this recipe before, go by the instructions step by step with the same ingredients. softened cheese could mean any kind of cheese, you should use cream cheese that is softened. vanilla flavoring is not the same as extract, so use the extract.

I got a reply from a chef who said that he used Feta Cheese for cheese cakes...he said it was his best seller.
