also what is the ideal Temperature? 350 400?

For poultry generally 350 F is ideal. As to the cooking time about 20 min per pound is OK as Jenny suggests. Check with a skewer when it is about done, if the juices run clear it is cooked.

At 325, unstuffed, it's in the range of 14 minutes per pound. I like to crank up the temp to 400 for the first 30 minutes so that the juices are sealed in. Pretty much fail safe. BUT, let your bird come close to room temp by taking it out of the fridge about 2-3 hours before putting in the oven. Otherwise, the cooking will be very uneven…pink on the inside, overdone and dry on the inside…that's no good!

Approximately 20 minutes per pound unstuffed, so, that's a total of 3 1/2 hours or so.
