i need something easy and delicious

You can always do finger sandwiches with some sort of chicken salad or egg salad, etc. OR do a sandwich bar with a meat tray, sliced cheese tray, and have different kinds of bread.

Here is one of my favorite recipes to have at showers/parties. I am a picky eater, but my mom used to make this cheese ball and it is SOOOO good!


2 8oz Cream Cheese (softened)
1 Small Jar Dried Beef (chopped)
1 Small bunch Green Onions (chopped)
1-2 tsp Soy Sauce
Chopped Walnuts


Mix beef, onion, and soy sauce in a bowl. Work in cream cheese until well blended. Refrigerate overnight. Form into a ball and roll in walnuts. Serve with crackers. If you don't have time to let it chill overnight, at least let it refrigerate for 2 hours.

I have throw n several baby showers inthe last year and this is what I have made:
-spinach dip (Knorr dry vegetable soup mix has a great recipe on the package) with either veggies or sliced baguettes
-mini spinach quiches (bettycrocker.com has a great recipe)
-fresh fruit (watermelon, cataloupe, honeydew, pineapple, strawberries, grapes)
-summer sausage, cheese and cracker platter
-baby BLT's (cherry tomatoes filled with a bacon, mayo blend I got the recipe off allrecipes.com)
-toasted French bread slices topped with prosciutto, fresh mozzarella, roma tomato slices, fresh basil and drizzled with olive oil

These seem to go over the best.

If it is a casual one, do finger foods that are easy to order or make like triangle sliced sandwiches, wings, stuffed deviled eggs, cheese and meat sticks. Desert you can find cute little chocolate molds that are all baby-ish, melt some chocolate, put a lollypop stick in it and refridgerate for cute cute chocolate lollypops.
For sit down formal a good salad and some pasta are a simple solution for lots of people. maybe a nice cheesecake or cute baby cake for desert. Have fun and congratulations!!

Blue Cheese Turkey Rolls serves 12

INGREDIENTS
1 cup and 2 tablespoons crumbled blue cheese
3/4 cup cream cheese, softened
3 tablespoons sour cream
1-1/2 teaspoons Worcestershire sauce
6 dashes garlic powder
12 slices thinly sliced deli turkey
1/4 cup and 2 tablespoons minced fresh parsley

DIRECTIONS
In a bowl, combine the first five ingredients. Spread over each slice of turkey; roll up each from a long side. Wrap in plastic wrap and refrigerate for 30 minutes or until chilled. Cut into 1-in. slices. Dip one cut end into parsley. Serve immediately

Easy Cheesy Nachos serves 6

INGREDIENTS
1 (14.5 ounce) package tortilla chips
2 (15 ounce) cans chili without beans
1 pound process American cheese, cubed
4 green onions, sliced
1 medium tomato, chopped

DIRECTIONS
Divide chips between six plates; set aside. In a saucepan, warm chili until heated through. Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with onions and tomato.

i would try a well balanced buffet, a meat, chicken, easy potato (or rice) and a quick sauteed vegetable....tossed garden salad. How many people....?

Beef= Try an nice easy roast beef. Cook the day before, prepare the gravy day before, slice the beef and lay neatly in chafing try, cover with gravy and the day of? simply pop in oven to reheat.

Chicken= prepare easy cutlets or purchase pre prepared ones. Again, day before? cook off the chicken, make a quick sauce of lemon, olive oil, white wine, garlic, spread over chicken. Day of, toss in oven to reheat.

Potato (Rice)= medium sized cube potatoes, season with salt pepper paprika,garlic, olive oil, lemon, touch of oregano and bake. Rice= just as simple.

Vegetables= take IQF frozen packs of veggies (carrots, caulifower, string beans) place in chafing pan, season with garlic, salt pepper and olive oil, bake, stir.... voila.

Salad= prebagged pre cut lettuce, safe yummy and worth it...

dessert? order a cake for showers of happiness....
