Hi there,
I've been trying to get the right amount of time to heat sunflower oil.

I use a non stick skillet/pan and the flame is just enough to boil water.

How long do I heat the pan before I add the oil and how long do I heat the oil after its in the pan before adding more cooking ingredients (eg. veggies, meat?)

Currently I heat the pan without oil for 20 to 30 seconds and then add the 2 tablespoons of oil to the pan and heat it for another 20 to 30 seconds.

I get the taste of slightly zinged oil after cooking and am looking for a way to avoid that zinged after taste in the food cooked.

Typically you shouldn't heat Non stick (Teflon) more than 15-20 seconds due to potential toxins that are released from the dry Teflon - then add oil and let heat 25-35 seconds since Teflon is thinner and you are only using a small amount (~1tablespoon to fry veggies) It will heat very quickly. I would recommend that you get a cast iron or stainless steel pot when the Teflon begins to break down - they are much safe to cook with and easier to clean plus they last lots longer. Good Luck!

Be realistic about your budget. Buy the heaviest metal you can because the heavier and thicker the metal the more evenly the heat will be distributed and you won't have to cook with such high heat. I like teflon coated steel because food won't normally stick in the pans and it makes cleanup much easier. I also like steel lids rather than glass (for obvious reasons). Once you start cooking you can't see clearly through the lids anyway. Make sure all handles are securely riveted to the pans and pots. You don't want loose handles when you're handling hot stuff! And make sure the handles are designed to remain fairly cool to the touch. Pick any brand you like and can afford. Try the chain department stores because their prices will be lower than specialty stores. Good luck with it. Good quality pots, pans, and kitchen knives are an investment that will last for years if you take care of them.

You add the oil before you turn on the flame. And put it on med-high. The way you are doing it is why you get a singed taste.

The perfect time to heat oil would be right before you want to cook something in it.
