Fried Mac and Cheese Balls Recipe
1 pound elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk, warmed, plus 2 tablespoons for egg wash
1 pound grated Cheddar
1 pound grated smoked Gouda
Salt and freshly ground black pepper
2 large eggs
3 cups seasoned bread crumbs
Vegetable oil, for frying
Marinara or Alfredo sauce, to serve
Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

Frying macaroni and cheese is the best way, in my opinion, to use leftover macaroni and cheese. These tasty treats are wonderful served with a marinara sauce, horseradish mustard, or even ketchup.
Fried Macaroni and Cheese Balls
Ingredients
leftover macaroni and cheese
dry bread crumbs
2 eggs, beaten
vegetable oil for frying
Directions
Shape leftover macaroni and cheese into 1 and 1/2 inch balls. Roll in dry bread crumbs. Dip in beaten eggs and roll in bread crumbs a second time.
Fill a heavy duty saucepan with approximately 2 inches of vegetable oil. You want to make sure he oil is deep enough to completely cover your macaroni and cheese balls while frying. You should also make sure your saucepan is deep enough for the oil rising a bit when you place the mac & cheese balls in the hot oil.
Heat the oil until a 1 inch cube of bread browns in 40 seconds Slowly immerse 2 to 3 macaroni and cheese balls into the oil. This number of balls will not lower the temperature of the oil drastically. It will take approximately one minute to brown your macaroni cheese balls.
Once brown, remove the cooked balls from the oil and drain on paper towels. Serve while still warm.
These macaroni and cheese balls are not at all greasy because they are fried in hot enough oil to seal the outside immediately and not let the oil soak into the center. Oil that is not hot enough will produce greasy balls that fall apart and that really aren't fit for eating.

TACO CHEESE BALL
2 packages of cream cheese
1 can tomatoes, drained
3 tsp taco seasoning
1 package Fiesta grated cheese
Ritz crackers
Combine the first three ingredients (a potatoe masher works well for this). Make sure that the tomatoes are drained well, until no liquid drips from the can.
Form a ball and roll this in the grated cheese until the whole ball is covered.
Allow to chill over night (covered).
When ready to serve, place crackers around the ball on a serving plate.

Special Macaroni and Cheese
2 cups cottage cheese
1 8-ounce container sour cream
1 large egg
3/4 teaspoon salt
1/2 teaspoon pepper
2 cups shredded sharp cheddar cheese
1 8-ounce package macaroni, cooked
Cook macaroni according to directions; drain and set aside. Stir together first 6 ingredients in a large bowl, then stir in macaroni. Spoon mixture into a lightly greased 2-quart baking dish. Bake at 350 degrees for 45 minutes and let stand 10 to 15 minutes before serving.
