I'd mix chopped bacon in with the mashed potatoes and season with mace. I'd do the gravy separate and serve it in a gravy-boat (I hate gravy on mashed potatoes, this way, you offer the choice)

I'd do the potatotes, but I usually like to match my gravy with the meat.. like a beef gravy with beef and chicken gravy with chicken. Bacon is pork, so I wouldn't do a bacon gravy with beef. So instead.. what I would do is make my potatoes either scalloped or au gratin and eliminate the gravy.

Potatoes all the way! Chop up some bacon and put it in the mashed potatoes, if you don't care about eating healthy.

I don't know where your from but, It's always been Corned Beef and Cabbage and boil potatoes. I never heard of putting stuffing with corned beef..

corned beef is best served with a boiled potato, cabbage and a vegetable like corn..... thats very irish... my grandma is from ireland and thats how she does it
