The atomic number of Iron is (as others have indicated) 26. The atomic number of any element is the number of protons in the nucleus. Iron has 26 protons. If you add one proton you get Cobalt. If you remove one proton you have Manganese. The number of neutrons in an atom's nucleus help determine how radioactive it will be and two atoms of the same element but with different numbers of neutrons are called isotopes. They have the same atomic number, but different atomic weights because they have the same number of protons but different numbers of neutrons.
The way an atom reacts chemically with other atoms is determined by the number of electrons orbiting the nucleus. An atom is electrically neutral when the number of electrons is the same as the number of protons. But if the number of electrons is different, the the atom becomes electrically charged (either positive or negative) and is called a ion.
So in short, by changing the numbers of protons, electrons or neutrons, one changes the atom's element, ion, or isotop respectively. And that is how the atomic number of an atom is derived...by the element that the atom is.

The Atomic number is 26. You are foolish if you think the Quran anticipated that in any way.
