The wonderful aroma of roasting green chile. MMMMMMMMMMMMMMM Should be a good crop this year, not too much or too little water. I should buy a bag and roast and freeze it. We eat that much over the course of a year.

I'm gonna make Green Chile Pork Stew.
Drool...
2 to 2 1/2 pounds pork stew meat, or lean pork, cut in 1" cubes
1/4 cup flour
1 teaspoon cumin
Pepper & salt
1 teaspoon ground sage
3 tablespoons oil
3 tablespoons vinegar
2 large onions, coarsely chopped
10 roasted green chiles (optional, seeds removed)
2 cups tomatoes (skin & seeds removed)
3 cloves garlic
1 small carrot, cubed
1 can (15 oz) chicken broth
1 teaspoon brown sugar
Season pork with cumin, pepper, salt, and sage; and coat thoroughly with flour.
Brown pork in hot oil in batches; remove when browned and set aside.
With heat still on, add the vinegar to the skillet, scraping up brown bits (vinegar will reduce).
Lightly fry the onions, chiles, garlic & carrot till slight softened.
Add tomatoes, chicken broth, brown sugar. Bring to a boil, add the pork & stir.
Done in 4hours but best stewed overnight in a slow cooker.
Bring to a heavy boil to reduce liquid before serving.
Serve on mashed potatoes.
