I love the stuff! To quote Sarah Kramer (cookbook author), saying you don't like tofu is like saying you don't like cake flour.

To reduce the mushy factor of Chinese tofu (the waterpacked stuff), you should freeze your tofu. Pour out the water in the package, put it in a plastic bag, and stick it in the freezer for at least 24 hours. You can store your tofu in the freezer and just pull it out the day before you cook it. I defrost my tofu in the fridge and have decided that it turns out well even if it's slightly frozen when you start cooking.

Then you have to press your tofu. Line a flat-bottomed colander (or just a plate) with paper towels, squeeze water from the tofu--GENTLY--put the tofu on the paper towel, put more paper towels over top, and put something heavy on top--like a tetra pack of soy milk. Let sit for 30 minutes while you do your prep work, and then cook your tofu!

I could eat the stuff 3 times a day! But.. that would be protien overload LOL.

Breakfast: my special "southwest style scrambled tofu" scrambled with salsa, and eaten with sour cream, salsa, and tortillas

Lunch: Stir fried Tofu and mushrooms over rice w/ sweet and sour sauce. Or maybe a nice "fried" tofu sandwwich. YUM!

Dinner: Whichever of those two I didn't eat at lunch LOL.. or maybe an "eggless egg salad" sandwich made w/ tofu... or a nice chineese tofu-based dish.

Ahh... the joys of tofu.

Peace, Love, and Tofu

3 things this world needs more of.

I don't hate it but I think I can tell why people do.

- Silken tofu, when broken, looks like barf. (Then again, foie gras looks like poo)

- People don't know how to cook it. Just tossing it in a salad and trying to eat it can be disgusting.

- Tofu has very little taste of its own. It only brings texture. The flavor must come from the juices around it, which tofu sucks up like a sponge.

- For some people it's the principle. It has a reputation of being fake meat, and puts them off kind of like faux wood or metallic painted plastic puts most people off.

- Most people who try tofu try it as part of a diet regimen and eat it with disgusting stuff, like raw in a sandwich or baked dry or something. Just deep fry it and put it in a sweet/spicy sauce with garlic, and you have some awesome tasting tofu.

tofu is great, too bad I had to stop eating it because I had allergic reactions to it..
I honestly think that if the person doesn't like it, it was never prepared correctly in the first place.
