Tomato slices, fresh pepper, kosher salt, touch of mustard, sweet red onion slices, guacamole or avocado slices, cheese (soy if you're vegan), and a nice glob of Veganaise between thin slices of very fresh Oroweat Oat Nut bread or any other bread made with grain berries and walnuts or hazelnuts.
Wrap the sandwich and leave it for a hour so the flavors combine. Then enjoy.
And I'm not even a health freak. I just like that combination a lot, even more than a grilled cheese.

I love Subway!! their bread is awsome, and I like cheese, plenty of lettuce and tomatoes, pickles, banana peppers, olives, a bit of green pepper, southwest sauce, oil/vinegar, and a bit of mayo. foot long veggie delight! Preferred bread: HEARTY italian.
a nice pickle and cheese sandwich is much better than it may sound to some people. Thickly spread Miricle whip on white bred, slice kosher dill pickles and colby-jack cheese and you have one yummy sandwich!
Tofu sliced the right thickness for a sandwich and rubbed with a vegetarian "poultry seasoing" and soy sauce,
"fried" in a teflon pan without oil, or with a teeny bit of oil if you want, and put on a sandwich with vegenaise, tomatoes, pickles and/or relish, hummus, whatever, makes a tasty vegan sandwich.
Oh.. almost forgot!! Worthington brand "Smoked Turkey" imitation turkey slices and miricle whip! Needs very few other ingredients.. SO yum!!
Worthington "Big Franks" imitation hot dogs, or "Fri Chick" either one of those veggie meats. Just put the meat in a food processor until ground up like feta chese or kinda like patee. While grinding, add mayo or miracle whip, and sweet or dill pickle relish depending on your preferance. Makes a "chicken salad" for a TOTALLY yummy fake "chicken Salad" sandwich. OMW soo yummy.

Hummus, sliced tomatoes, sliced onion, cucumber, sprouts on a heavy whole grain bread..yummy.
Similar but with Avocado works well for me too.
Instead of bread use Romaine leaves or Butter Lettuce leaves..lighter,cooler meal.

The fresh salad sandwich my late grandmother used to make for me in my childhood. It was perfect. No store sandwich comes near.

I love alfalfa sandwiches on whole wheat pita bread....topped with onions, tomatoes, cucumbers, romaine, veggie cheese and hummus. MmmmmmM!

the best best number ONE(in my little opinon ;) is peanut butter and sugar free jelly!! :O)

Tofu firm one pack .Take out of pack, mash.Add 6 tablespoons veggy chicken flavour granules to one block tofu, mix.Add to bread add veggies, salad.Yum.
