The "blue veining" they are describing in blue cheese comes from several different types of Penicillium mold. It is completely harmless and tastes delicious, if you like that very pungent aftertaste!
For example, Penicillium roqueferti is used in Roquefort blue cheese.
Please, DO NOT eat green or blue colored cheese that is NOT supposed to be.

My dear you should have checked on how the cheese is made. the "blue/bleu" veining is caused by the injection of blue/green spores from penicillium rogurorti or glaucum. These spore originally came from the kind of caves the were first stored in. By accident someone tasted the cheeses that were thought spoiled.
Thank goodness they liked them. Now we have many types of "blue veined" cheeses. These spores do not harm us.

When the curds have been formed into a wheel;
they press a tool made of copper wires into it.
Then the cheese is stored in a special cave,
where this particular mould in known to grow.
While the cheese is curing, the mould gets in.
It spreads through the holes into the gaps.
I love blue cheeses:
Danish, Roquefort, Stilton, Gorgonzola, etc.

You're gona feel really bad when I tell you that the "Bleu vaining" is mold. True Roquefort is kept in caves to age (in France) where it developes the bleu veins. They found out by accident when they were trying to keep cheese cool and preserved many many (centuries) ago.

The blue is mold. They inject air and bacteria into the cheese before it is aged and it molds in the areas that they inject- thus creating veins.

Actually cheese is actually mold and a certain kind of mold is blue... and that is why it is BLEU...
BLEU is French for BLUE
They make lots of cheese in france.
