Myfiance and I are getting married at the Chicago History Museum and the theme of the wedding is Old-School Classic Chicago with a Modern Twist.

We are interviewing caterors now and we want Classic Chicago fare for every part of the meal. (passed appetizers, salad, 1 steak choice, 1 fish choice, 3 interactive dessert stations, late night snack)

Any suggesstions....we already have alot of good ideas and have looked at menus of classic chicago steakhouses and restaurants but would like some fresh ideas from some of you.

I would pass up doing the passed appetizers only because people fill up on those.

I would add a pasta course instead, something different, maybe a Fettuccine Alfredo instead of a red sauce pasta. Instead of your basic green salad maybe do a salad with mixed baby greens, apples or pears, with carmelized pecans and blue cheese. ( See Pompei Bakery on Taylor Street: I think it's called the Mele Verde Salad.)
Filet Mignon's are good, they are the most tender cut of meat, with roasted potoates or double baked potato and baby vegetables. Have them serve Bernaise Sauce on the side where people can pass to one another. As far as the fish goes, I would do an Orange Roughy or Tilapia in a Lemon Butter sauce.
Dessert stations: Make your own ice cream sundae, a chef making crepe's or Banana's Foster. (Personally I had this plus a sweet table at my wedding and I felt it was a waste of money.) A simple slice of your wedding cake with a small hot fudge sundae is what I have been seeing at alot of wedding with tray's of cookies and mini pastries at each table. (Domino's Bakery in Chicago on Harlem Avenue does fantastic mini pastries!) Make sure you have good breads on the table too, such as a crusty french or italian, foccacia bread or another type that is like a rye bread with raisins and nuts.

I have heard that a lot of brides and grooms are doing late night snacks from White Castle or Gene and Jude's Hot Dogs, serving them around midnight here in Chicago.

Have you thought to try to see if any of the local culinary schools cater? Some of the top culinary schools in the world are in Chicago.

Have you checked with the Burghoff? (Berghoff, sp?). Old world German, first restaurant in Chicago. I'm sure they'd be happy to help, and the food is excellent.
