A variety of Kabobs would be easy to make, store & cook. We love doing various meats like lamb, beef, chicken or pork ribs or thin steaks, marinating them and adding veggies, plus perhaps offer purely veggie kabobs (zuchini, mushrooms, tomatoes, onions, peppers) and fruit kabobs (pineapples, cherries, kiwi etc) since kids & adults love them with a variety of dips & sauces.
Corn on the Cob - grilled if there is room
Beans (3 Bean Cold Salad is really good and easy)
Deli Slaw (pretty, super easy & cheap)
Various Pasta & Potato Salads
Deli Slaw - The look of red cabbage is very nice, I tend to mix red with green cabbage for this.
2 lbs shredded cabbage
2 cucumbers, thinly sliced
4 carrots, shredded
2 Spanish/Vidallia or any onions, thinly sliced
1/3 cup vegetable oil
1/3 cup white sugar
1/3 cup white vinegar
1 tablespoon salt
Mix the oil, sugar and vinegar well. Stir in salt and the vegetables. Marinate at least three days in refrigerator, turning frequently.
3 Bean Salad
1 can (10 oz.) green beans
1 can (10 oz.) yellow beans
1 can (14 oz.) kidney beans
1/2 green pepper, chopped
1 medium Spanish (or any) onion, chopped
3/4 cup sugar
2/3 cup white vinegar
1/3 cup vegetable oil
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon celery salt
Dash cayenne
Drain beans. Combine in a large bowl with green pepper and onion. Make dressing: in a small saucepan combine the sugar, vinegar, oil and seasonings. Bring to a boil over medium heat to melt the sugar. Pour dressing over the beans and toss to mix all together. Refrigerate for several hours or overnight.
Simple Pasta Salad
Box of tri color rotini
chopped carrots, cucumbers, seeded tomatoes (or toss in cherry since they will last longer for a picnic) pepperoni, olives
cubed sharp cheddar
plenty of Italian style dressing, celery seed & dry mustard
Make to taste, keep pasta tossed with seasonings and add veggies & extras before serving. Keeps well.

Start with some cheese and crackers or some homemade salsa and chips. Then have a make your own shush-Ker-bob barbecue. Have everything set up in separate bowls with skewers for everyone to make their own. Veggies in big chunks, meat, chicken and then have one person in charge of grilling. While waiting everyone could also make their own salad from a make ahead salad bar. We do this all the time, soooo much fun.

Grilled corn on the cob is a great crowd pleaser at picnics! keep it soaked in butter and do not wrap it in tin foil! it is awesome!

Well, there's always the old standards.....hot dogs and hamburgers. Put out bowls of chips, Doritos, popcorn, various sodas, pizza. That's all the kids want. The adults will enjoy it too.
