Hi Erin,
welcome to the veggie world, occupied by 90% good helpful vegetarians and 10% meat-eating trolls who's only enjoyment in life seems to be to criticise and insult veggies.
You are right to be flumuxed by thier behaviour. We too have no clue why they do it.
There is nothing wrong with you watning to make vegetarian food that tastes like meat, if thats your thing.
EDIT:
I've just checked your other question and you had 2 minor comments and 5 decent answers...believe me, thats some sort of positive record on here. You should see it when the real insulters get logged into the V&V section. I would hardly call that "bashing", and the 2 that replied negatively are well-known meaty-trolls, not vegetarians. just go with the positive answers and ignore the rest.

I dont' know how to do vegetarian stuff but I know that they make vegetarian sausage. Try buying that and making the gravy the normal way.

I can't answer your question about the gravy but I can tell you that people are just so mean,they have no respect for others in what they believe in or if a person has to eat a certain way do to health problems.to me there are alot of teenagers on this site and I get so mad when questions are asked that does not even pretain to food.I looked on foodnetwork.com and did not see that type of gravy. wish you luck on finding one. maybe you can go to a local store and ask if there is a type of liquid that you can buy that has that flovor but without what it is your mother can not have. just an idea and I know you can also use corn starch instead of flour to make gravy.

I make a really easy gravy -
I use organic veggie bullion and make about 1 cup of broth.
While it is still cooking I add some whole wheat pastry flour - which has been stirred into a small amount of cold water.
I never measure - the flour - but two tablespoons seems about right. It is really good over biscuits.
Nothing like vegan comfort food.

Heres a recipe from Vegan Wolf Wow this web site sounds really great
VEGAN Cream Sauce and Gravy
Ingredients
4 T Margarine or more
2 T flour
2 cups Unsweetened plain soymilk*
1/2 teaspoon salt
1 T broth powder
3 T or more Nutritional Yeast
OPTIONAL For even tastier results, add 1/2 c finely ground cashews!
Directions
Melt margarine in saucepan.
Mix in flour.
Add soymilk, stir til thickened.
Remove from heat.
Stir in salt, broth, and yeast.
FOR GRAVY:
add 2 T soy sauce
more broth...
mushrooms optional...
Vegan Sausage or tvp for sausage gravy.

Tips
* For best results Only use soy milk that has just soybeans and water on the ingredients label. Other ingredients will alter the flavor.
**For best results I strongly recommend Fronteir brand, beefy broth powder.
Serve over potatoes, pasta, vegetables.....
Thin with more soymilk and use as a cream soup base
Serve with garlic salt and more nutritional yeast, and fresh ground pepper.
Use less, or no, margarine for reduced fat.... May want to add more broth.
For richer sauce add 8 oz crumbled soft silken tofu or cubed prepared vegan cheese, such as Follow your Heart cheddar.
Add vegetables, such as broccoli, mushrooms etc...
Add lots of garlic for an alfredo sauce.
Be creative.

8 tablespoons vegetable oil
3 cloves garlic -- squashed and minced very well (3 to 6)
2 slices yellow onion -- chopped (2 to 3)
8 tablespoons all-purpose white flour
4 teaspoons nutritional yeast
4 tablespoons low- or reduced-sodium tamari (soy sauce)
2 cups water
1/2 teaspoon sage
1/4 teaspoon ground black pepper
1/2 teaspoon salt
5 white mushrooms -- sliced (optional) (5 to 6)
extra flour or cornstarch (optional)
Measure the vegetable oil into a small saucepan.
Cook the garlic and onion in it for about two minutes on medium or medium-low heat, until the onion is a bit tender and translucent.
Add the flour, yeast, and tamari to make a paste.
Add the water gradually, stirring constantly.
Bring the gravy to a boil on medium to medium-high heat, stirring constantly -- the gravy has to boil for it to thicken.
(Grandma always told me to cook gravy for a full five minutes at a boil to make sure you kill the bugs in the flour, but I don't always bother.)
Add pepper.
Stir in the sliced mushrooms, if desired.
Add salt, if desired.
If the gravy is too thin for your taste, add one or two tablespoons of flour or small amounts of cornstarch to thicken it and add home-made-looking lumps.
Use a wire whisk to eliminate lumps.
Pour the piping hot gravy onto toast, bisquits, vegetarian sausage, poultry stuffing, potatoes, or vegetarian burgers.
This gravy takes about ten minutes to prepare.

It's so funny that you mentioned that. I make vegan sausage gravy and biscuits all the time. I make it vegan but you can leave more of the recipes intact if you like. Yeah, people are just RETARDED and are veg as an excuse to be stuck-up snotty pricks/bitches. Sorry about that. =)

I just usually heat canola oil in a pan(because vegan sausage isn't 50% fat like real sausage) and add the the flour, wait until the flour turns gooey and bubbly and then add the PLAIN soymilk(preferably unsweetened) and stir+simmer until it is the desired consistency.

It calls for buttermilk but I have read that 1 cup plain soymilk+ 1tbsp vinegar= vegan buttermilk. =P I don't know if it's really necessary to create veg buttermilk.
PS- I usually make lots of extra sausage crumbles so that I can heat it in a pot with good spaghetti sauce until it is thick and I use it hot or cold in sandwiches.

Some people don't understand that you just don't want to eat meat, but like the taste.
Some people are just extreme and throw things in your face, people who eat meat and vegetarians alike. They just want to be right.
I mean, hey, I don't blame you, sausage is good. But I can also understand why you wouldn't want to eat meat.
Some people just can't accept two things at once. It has to be one or the other. But it really shouldn't.

I think some people want you to give up not only meat, but also all desire or memory of meat. Some people forget the reasons most of us are veg (health, animals, etc.) Very few people are actually against the taste of meat, but I think they would rather you led a lifestyle completely devoid of any vestige of meat. For good or ill, I think that's what it's about.
