i had a casserole once that was amazing - but it used a ricer... not many people have one of those - a grater would work ok, though
I think it had rice (jasmine would be wonderful, brown or wild rice would be heathy) and cream of mushroom soup, fresh diced mushrooms, and zucchini that had been through the ricer/shreder - diced onions, It had the consistency of ....... hm... like oatmeal, maybe? It was dense, flavorful, and really healthy!

Tonight I cooked a vegetarian roast with carmelised roasted pumpkin, stuffed pepper with bread crumbs, butter, tomatoes and onions and herbs, cobs of corn with garlic, cabbage, peas in cream, roasted carrots, roasted sweat potatoe, baked potatoes with sour cream, and garlic bread and pepper gravey and the children loved it.

We can eat everything else of course. Grains like pasta and rice, all veggies and fruits, legumes, nuts, soya products etc. The list is endless. Google vegetarian recipes.

Almost anything. Salads, soups, veggie sandwiches, pasta, pizza, veggie burgers. For example, today I had tomato soup with breadsticks for breakfast (weird, I know, but I slept in until lunch time, lol), for lunch I had a veggie burger with these: http://www.seeveggiesdifferently.com/product_detail.aspx?family=363&id=323
