Honestly, it's because it's a high carb meal which metabolizes very quickly. The high proportion of rice or noodles is much higher than the amount of protein (which takes much longer to metabolize and makes one feel full).

Because most chinese food contains a chemical called MSG that is actually a filler. When used in cooking, it forces you to feel full quickly, but also, as soon as it wears off, you feel like you're really hungry again. It usually lasts about 2 hours for me. Most places don't use it anymore since a lot of people are allergic to the stuff.

MSG used to be the main reason, and as someone pointed out, it is not being used as much as it used to be....or so they say!
Candida overgrowth is a widespread condition in which we feed ourselves refined starches (like white rice!) and the Candida organisms go hog wild with excitement and gobble up as much as it can when we eat it. It eats up the free glucose and we are left a little bit undernourished in the blood sugar department, whichs sets of the cascade of hunger signals.
If you don't have candida overgrowth, and they aren't using MSG, it might be because you are eating larger volumes of low calorie vegetables than you usually consume at other meals. Of course you'll be hungry sooner!

a lot of chinese dishes are high in carbs & msg. between the two, chinese food is very filling for the time being.
