This book is my absolute favourite. Its called "Meals without meat" by Alison Holste and Simon Holste. Its a best selling veetarian book. Its great. Also go to the Vegetarian Society Website. its has literally thousands of snacks, breakfast ideas, mains etc. Aso the Vegetarian Society Australia website (based in Queansland) brilliant information Good luck.

A book I really love is Julian's Raw: the uncookbook...if you aren't strictly into raw foods already, you might be after browsing his book! His love of food in the raw is very compelling. He's not preachy, he just loves food and entertaining others.
