My favorite is my Curried Basmati Rice. It's easy. In a medium saucepan stir a big spoonful of minced garlic and a big spoonful of minced ginger in a Tbsp of olive oil, over medium heat until fragrant. Add 1 cup basmati rice and stir for a couple minutes until well coated. Add 1 Tbsp. curry powder and stir well until mixed. Add 2 cups chicken broth. Bring to a boil, reduce heat to simmer and cover. Time for 20 minutes.

At the halfway point you can toss in baby shrimp, green onions, and cilantro, and maybe some frozen peas. You can really toss in about anything!

Saffron Pulao: use Basmati rice straight from the Himalayan foothills.

Ingredients:

Basmati rice 2 cups
Ghee / oil 3 table spoons
Cumin seeds 2 teaspoons
Bay leaf 2 number
Salt 1 1/2 teaspoons
Water 4 cups
Saffron two pinches
Mint leaves a few sprigs

METHOD:

Wash the rice in luke warm water, drain water and soak for 20 minutes. Heat the ghee on medium heat, add the bay leaf and cumin seeds sauté for a minute. Add the rice and sauté till the rice starts to clump. Now add the water, saffron and the salt. Boil till almost all the water has evaporated, cover and reduce heat to low and cook for another 10 minutes. The rice should be fluffy. Garnish with mint leaves. Serve hot.

Rice Casserole

1 cup Uncle Ben's converted rice (UNCOOKED)
1 stick butter (cut into pats)
1 can beef consommé
1 can French Onion soup
1 small jar Green Giant sliced mushrooms

Put butter in baking dish. Pour rice on top. Add soups and mushrooms. Bake uncovered 45 at 350 or until mushrooms have come to top and dish is firm.

I really like making a butternut squash risotto. I obviously use an Aborio rice to make this. My favorite normal rice is Lundberg family's Short grained brown rice. Their long is good too. Great rice, wonderful nutty flavor. We pretty much only eat brown rice.

My staple is brown rice steamed with chicken broth.

My favorite recipe is Egyptian Rice, with white rice, onion and lentils.

Brown Rice, long grain, and a Thai rice I buy from there store, its short, sweet, (no name) and Jasmine. I like rice fried with vegetables, with hot soups, shrimp in olive oil with garlic, shallots, mint,basil, add a lettuce leaf with lime. Rice is my favorite food my dog also sometime that's all I eat. I'm American Indian and Irish!

Prawn pulao ,wonderful rice dish cooked with prawns,peas (optional ) ,all cooked in stock /water ,long grained basmati rice for a festive look,any fine quality medium grain rice for daily use.
