As simple as it sounds. A ghee made from milk of any domestic cow s milk e.g. Gir cow is from GJ, if some one makes ghee using the milk obtained from cow milk it will be called as desi ghee. On the other hand if ghee is obtained from milk of HF or Jersey cow which is imported and adopted breed then the ghee wont be refered as Desi Ghee.

Ghee made by the age old process of collecting cream from heated & cooled milk,churning it into butter & then clarifing by slow heating till all water evaporates ,is called desi ghee. In part all explanations given hold an expalyion of the basic idea conveyed by the term desi ghee,many places also refer to it as 'asli' ghee which in Hindi means pure.,which conveys the whole meaning in a nutshell.

Normally any extract from the animals milk is referred to as ghee. However, cow is regarded as having the qualities of a mother and is considered as our national asset and a specie to be protected and revered. As it is also considered as a national symbal and asset otherwise, desi, the ghee derived from it is also referred to as desi ghee.
