Salad with homemade basil dressing with avocados, sweet onions, red peppers, mushrooms
Baked Potato with soy butter, soy sour cream, salt and pepper
Slice of homemade vegan carrot cake.
Yum.
Edit: Just an observation reading these posts. The vegetarian/vegan meals seem significantly healthier and contain MANY servings of vegetables. Look at the meat eaters posts - all they mention is the meat they are eating. And they think we are unhealthy - hahaha

I mashed a bowl of hot chickpeas in the juice of half a lemon with some garlic, black pepper, and a tiny dash of red pepper. Then I poured that over a giant bowl of romain lettuce and tomatoes. I'm eating that now. Then, maybe, tonight I'll have a big ol' fruit smoothie.

This evening, I had pesto (without cheese, of course) over whole wheat spaghetti and crusty bread dipped in a combination of olive oil and garlic. Just thinking of it is making me hungry all over again! Perhaps I'll have another bowl... or a Tofutti Cutie smothered in chocolate syrup!

I just had a big bowl of rice with fresh sauteed vegetables poured over it with some sauce~I had roasted potatos and green beans for lunch~for my afternoon snack I had a "veggie" sandwich....on toasted whole grain bread with vin. & oil and sea salt and ground pepper on it. The vegetables I used were tomatos, cucumber, lettuce, spinach and onions.

nothing! i've already eaten 850cals today and its bearly 3pm. im not gonna eat anymore except for water.
