When you bring plants like broccoli home trim the base under water just like you do for cut flowers. Then stand the fresh end in cold water or place it in the fridge in water to allow the plant to rehydrate before preparing for the cruditee tray.
This works to store fresh herbs or asparagus. Any whole stem will be happier with a water supply. Place stems in cup with water to cover cut ends. Cover the entirety with a plastic bag.

Two nay three reason.
1. They use very fresh broccoli/veggies.
2. By soaking the veg. in ice cold water the plant cells soak up the water making them turgid (hard) and thus crisper. Perhaps a 20min soak. But work with a Small sample a brocc. in several separate water soaks varying the time. In this way you can see what works best. Oh course too long and it will be mushy as plant cells rupture.

The tray must be prepared elsewhere and they have access to really fresh broccoli.
stuff in the store may have sat there for days.

i think if you steam it for only a short time, and then shock it, by putting the brocolli in cold water, it will stop the cooking, and they will stay crispier!!
