Sleeping is a natural phenomena with all Vitals Intact within normal limits & response to external stimuli are normal. In deep sleep there is rapid eye movements. Shallow respiration i.e Respiratory rate falls. Hear rate falls.
In contrary to unconsciousness due to Trauma, Poisoning, Intoxicants, Diabetes etc. There is No or very little response to stimuli, Pupillary (eye) reflex may be absent and non reactive to light. In head injury or syphilis there may be a one constricted pupil.
Respiratory rate may fast or straineous.
BP readings depends on cause.
Heart rate is slower, weak pulse or vice versa in SVT attack.
Symptoms require experience, e.g cold clammy skin can be due to hypoglycemia, and high fever in Heat stroke.
SO SLEEPING IS PHYSIOLOGICAL AND UNCONSCIOUSNESS IS PATHOLOGICAL.
Hope answered your question.

Unconscious is a dramatic alteration of mental state that involves complete or near-complete lack of responsiveness to people and other environmental stimuli. Being in a comatose state or coma is an illustration of unconsciousness. Fainting due to a drop in blood pressure and a decrease of the oxygen supply to the brain is an illustration of a temporary loss of consciousness.Loss of consciousness may occur as the result of traumatic brain injury, brain hypoxia (e.g., due to a brain infarction or cardiac arrest), severe poisoning with drugs that depress the activity of the central nervous system (e.g., alcohol and other hypnotic or sedative drugs), severe fatigue, and other causes.
Sleep is the state of natural rest observed in humans. In humans, other mammals, and many other animals that have been studied - such as fish, birds, mice, ants, and fruit-flies - regular sleep is necessary for survival. The capability for arousal from sleep is a protective mechanism and also necessary for health and survival.
Sleep is generally characterized by a reduction in voluntary body movement, temporary blindness, decreased reaction to external stimuli, loss of consciousness, a 70% reduction in hearing capacity, an increased rate of anabolism (the synthesis of cell structures), and a decreased rate of catabolism (the breakdown of cell structures).
