Do a roast in a roasting pan with potatoes, green beans, and carrots. Cook it at 250 degrees for about 4 hrs. You can have it all prepped and let it cook while you are gone. Put some worchester sauce and a dab of A1 on the roast and sprinkle some Tony Chacheras creole seasoning all over it.....even on the vegetables. It's EASY and it it's GREAT for that many ppl. A parade is a pretty casual event so I would go with casual food. How about sausage and peppers with good rolls, and a garden salad. You can make everything the day before hand, although I suggest that you cook them all separately so that you guests can pick and choose what they like on them. Have a few types of salad dressings, bacon bits, grated cheese, croutons, etc. to dress up the salad. Serve it with a high quality chip. If you want something to have when you walk in while your food heats up make a bread dip. I use the recipe on the Knorr's veggie soup box. It's easy and everyone loves it. And if there are going to be children there I would suggest getting a pack of hot dogs, just in case.

Make a shrimp pasta. You can get it from a bag or you can make it yourself.

Saute your shrimp (medium size) in herbs, spice and butter and/or olive oil
Steam some veggies (broccli, peas still in the pod, sliced carrots, zucchini, squash, red bell pepper, green bell pepper, onions- just pick some or all)
Boil some noodles
Toss it together in a large pan with butter, more herbs and spices and olive oil

Package it up in containers and stick it in the fridge. Buy some pre-buttered garlic bread (the long loaves that come in foil bags) and that takes just 10-20 minutes.

Of course everyone serves salad- so stick out a large bowl of leafy greens (not just a head of chopped up lettuce) you can buy prepackaged bags. Put out a few choices of salad dressing and it's simple yet still tasteful (if you're going for that and not a 4th of july afternoon type thing).

Maybe pick up a couple of pies- lemon merengue, key lime or banana- something fun.

Make in a crockpot and leave on low while the parade is going on.


Taco Soup

1-1½ lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning

Garnishes (any or all)
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese


Brown ground beef over medium heat in large stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still opaque, stop cooking and drain off any fat. Return to heat and add remaining indredients. Cover and let simmer at least 30 minutes, or up to about 3 hours. (Can be held longer in a slow cooker set on Low.)

Serve in bowls w/ crushed corn chips in the bottom. Top each bowl w/ garnish of choice.

Make up a few sub sandwiches such as ham and cheese, turkey, roast beef, before you leave . Subs often taste better when all the flavors can mix together.
Make a salad, such as potato or slaw and a few crisps (potato chips).

Soft tacos Precut the lettuce, tomato, onion, and cheese. Pre cook the meat and heat it up and the re fried beans. Get the salsa out of the fridge. Use large flour tortillas to wrap with.

Spaghetti, bread sticks, and salad. You can make the sauce and salad before hand and so you just have to boil the pasta and heat up the bread and you're ready to entertain. Pick up a box of red wine and you are ready to PARTY!

You can get pre-made burger patties at most grocery stores and a large container of potato salad. Throw the burgers on the grill, put the potato salad in a bowl, serve with ice tea/coffee/beer/wine and wall-la!

Can you have a BBQ and just make burgers and hot dogs and maybe a quick salad?? What about simple sandwiches and some veggies with dip?
