You can get both types of sandwiches at the grocery store deli counter must cheaper than a sandwich shop. Also you could probably buy already made cupcakes with white frosting that you could simply add stitching to with a tube of red gel frosting. In fact, you could probably buy the fruit salad ready-made too. I know its a tad more expensive then doing it yourself, but you'll save yourself the time, hassel, and clean-up. Have fun!

A big platter of nachos. I mean big. Like making it on a pizza pan. Beer boiled brats. Cheese tray. Shrimp platter. Tortilla chips and dip. Antipasto olives. Veggies and dip in a bread bowl. And chili always is good.
You could make the chili the night before, and grab the cheese, shrimp, veggies, bread bowl, and olives from the store the day before. You can even make the taco meat for the nachos the day before. So all you have to do in the morning is assemble everything, boil the brats, make the dip, reheat stuff and set it all out.
To dress tail-gate food up, don't serve them on the platter from the store if you can. It'll look like you woke up at 3 a.m. to make all that food!

First of all, dont freak. This is a very simple meal. Here are some ideas i had.
Lunch (entree):
Hotdogs!
Sides:
Chips, veggies and dip, and cheeses and crackers. Ask your husband what your in-law's favorite foods are. Go from there!
Dessert:
Make some jello and add whipped cream on top! Simple, but delish!

I think the best idea for a good tailgate party is to have really good ingredients for your party. It can be casual and still be really high quality.
I don't know where you live, but if there isn't one really close by you order some really good sausage. Serve this with a mixture of vidalia onions, red and yellow peppers, a high quality mustard and fresh baked rolls.
Second make some really tender baby back ribs. Everyone loves my ribs. I season them liberally, when I say liverally, I mean liberally with 1 parts each salt, fresh ground black pepper, onion powder, garlic powder, paprika, cayenne, and 3 parts dark brown sugar. The ribs should almost look they have a crust on them. Let it sit overnight then wrap in tin foil and bake (300 F) or grill on a really low heat for about 2 1/2 hours. Then baste with a good BBq sauce. I like Sweet Baby Ray's, but it's all up to what you like, and crank the heat up to high. Then the BBq almost gets a little crispy.
I also love grilled corn on the cob. I let the corn (in the husks) soak in water that I have seasoned with equal parts of sugar and salt (generally for 4 husks its about 1/4 c. of each) for about an hour. Then I grill them. I don't know what it does, but it makes it yummier. Then I like to make some type of flavoured butter to go with it. Depending on your taste you should make something that matches. I like roasted garlic and chili cilantro. Corn is really good with fresh grated pecorino or queso fresco (depending on what type of flavored butter you use).
Another thing I love to make is grilled cheese bread. Get some crusty bread and brush olive oil on each side with a sprinkle of salt and pepper. Grill one side, then flip the bread. On the grilled side lay a piece of smoked gouda or mozz on it. Delish!
Another really good recipe is to take shrimp and marinate it in an Asian flavored salad dressing for no more than 1/2 hour. Skewer it and grill up. Yum. If you want to get really fancy skewer them on sugar can. The sweetness the can gives it is amazing.

Honestly.. It's still a ball game so don't over do it.. cause it will be obvious!! go with snack food.. veggies, cheese tray.. some small sandwhiches... that should be nice and light to that you can add bbq.. hamburgers/hotdogs that's baseball or even some wing dings.. and of course have pop, water, beer and wine on hand!

A tailgate....hot dogs or similar, Burgers, ribs, fried chicken, Fried shrimp. Watermelon, potato salad, Pasta salad, Chips, Fruit salad...those are all super easy, can be supper cheap...you can easily purchase pre-made if you want...but do not tell

GO to a deli and but pork bbq and chicken salad, buy buns, chips, cole slaw, maybe potato salad, then have some friut and cookies or brownies for dessert, have iced tea and lemonade. Don't stress! it's supposed to be fun!
