My aunt is holding a Mother/Daughter weekend get away, and wants my mom and I to bring an appetizer. We have to leave tomorrow night, and have basically tonight to make it. Any suggestions as to what to do or make? Something quick and easy. It is to go with a pasta dish meal that my aunt is making for dinner. Any and all suggestions would help!! Thanks

YOu can try making bruschetta. it goes very well w/pasta dishes since it's Italian and it's very easy. Just buy some french bread, slice and bake it in oven for 5 to 10 min and while it's hot, rub some garlic on it for garlicy flavor. Then slice some tomatoes and add basil, olive oil, and salt and pepper and spoon on top of the bread. you can add a slice of mozarella on it if you want. it's easy and good and very healthy.

STUFFED MUSHROOMS -
1 pound medium sized mushrooms - 1 - 2" wide
1 pound low fat ground sausage
1 pound stuffing mix
1/4 cup parmesan cheese
hot water

Clean and de-stem mushrooms. spread on paper towels to dry.
Brown sausage.
Mix sausage, stuffing mix, and cheese. Add a little hot water at a time; until mixture will hold shape.
Stuff each mushroom, until a little overfull - too much will full off and be incinerated on pan.
Place on sprayed cookie sheets, and place in broiler for two minutes. Use a timer! Taste-test the smallest one.
Re-set for 1 - 2 minutes if necessary.
Wrap up in aluminum foil, and transport in covered dish or pot. These will stay warm for a while: 15-20 minutes.
You can probably microwave any leftovers, but I've never had any!

I think cold sliced tomatoes, sliced mozzarella and a sprinkle of fresh basil on top should travel well. Serve with a vinaigrette dressing when you get there.

I seen this on Everyday Italian, looked yummy!
Asparagus and Smoked Salmon Bundles
1 bunch asparagus, ends trimmed (about 20 spears)
2 tablespoons olive oil
1 tablespoon chopped fresh rosemary leaves
Pinch kosher salt
Pinch freshly ground black pepper
4 to 6 ounces thinly sliced smoked salmon (1 slice per asparagus spear)

Preheat the oven to 400 degrees F.
Lay the asparagus on a foil-lined baking sheet. Drizzle with olive oil. Sprinkle with rosemary, salt, and pepper. Roast until cooked and starting to brown around the edges, about 10 minutes. Remove from the oven and transfer to another baking sheet to cool. Once the asparagus have cooled, wrap each spear in a slice of smoked salmon. Arrange on a serving platter and serve at room temperature.

GLAZED SAUSAGE BITES

INGREDIENTS
1 pound bulk pork sausage
1 egg
1/2 cup saltine cracker crumbs
2 tablespoons milk
1/2 teaspoon rubbed sage
1/2 cup water
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon vinegar

DIRECTIONS
In a bowl, combine the sausage, egg, crumbs, milk and sage; mix well. Shape into 1-in. balls. In a skillet over medium heat, brown meatballs; drain. Combine remaining ingredients; mix well. Add to skillet; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until centers of meatballs are no longer pink.

****Makes 16 meatballs. It's ALL of the brag attached to it. Tangy & sweet. You can change the flavor by using mild, medium,or hot sausage. Quick & easy. I suggest using a piece of parchment paper on the counter to make the meat balling a little easier & cleanup quicker.

My father in law always brought shrimp cocktail to every party, and everyone loved it. No cooking for him, and he got all the glory!

Another easy suggestion is gourmet olives and cheese. The bigger grocery stores have "olive bars" where you can pick and choose kinds of glamourous olives.

Can't get easier than that!

CHEESE STRAWS taste great, you can make them today, they will travel well, and still be tasty 24 or 36 hours later.

i like them made with sharp cheddar, but you could use a different cheese if you wanted it more Italian.

stuffed peppers or stuffed mushrooms both go well with pasta.They have those little sweet peppers this time of year that are really yummy.I don't use rice and hamburg like most stuffed pepper recipes, its an egg , bread and cheese filling. If you are interested,I'll give you the recipe.
