My son's school is having "ocean pudding" for snack on friday, but he's dairy allergic. I don't want him left out. I know how to make chocolate pudding, but I can't find a recipe for vanilla pudding. I thought he would like blue pudding (obviously vanilla pudding with blue food coloring) for their ocean theme. Does anyone have any recipes?

I had no idea any of the jello brand flavors were vegan, I only have chocolate and white chocolate in the house. (I'm not aware of many vegan things, as we are not vegan yet- my son is too picky and has already lost weight, I can't cut anything else out of his diet)

I never thought of banana (duh), I will have to try that.

Couldn't you just make Jello Instant Vanilla pudding, and use Silk soy milk to replace the milk? I think it would work! :) Then put the blue food coloring in. Get some of those fish-shaped cake sprinkles to put on top.

Jello Instant - vanilla flavor - IS on PETA's accidentally vegan mix. But who really wants all those chemicals?

I'm just not fond of vanilla. How about banana?

Banana Pudding

Serves 4; makes 3 cups

10 ounces soft tofu
6 ounces firm tofu
2 small very ripe bananas
1/2 cup granulated sugar
1/4 cup soymilk (calcium fortified)
2 teaspoons vanilla
In a blender or food processor, blend all ingredients until creamy and smooth.

Pour into small dessert cups and refrigerate for 2 hours.

Most of the Jello brand puddings are vegan. Read the ingredients not all are - vanilla is though.

I have had a problem getting it to set right though, use less milk maybe. Only tried it once.

"Ocean pudding"? Weird!!
I expected there to be shrimp etc. in there, ha ha.

You just add the mix to a block of Silken Tofu and blend.
You can always just get the Silken Tofu and add your own ingredients. This is what I've done: blend these in a blender:

silken tofu
cane sugar
vanilla
guar gum (thickener - works with non-heated recipes)
little oil to make it smooth

1 box of mori-nu silken tofu, crumbled up
2/3 cup (brown) sugar
1/3 cup cocoa powder(optional)
1 tsp. vanilla extract
1 tsp. almond extract (optional)
stick everything in a blender or a food processor, and blend blend blend till it's pudding

FYI: jello brands ARE NOT VEGAN!!!!

The first is coconut the second in vanilla.
