Use ground "beef" crumbles in it (Morningstar and Loma Linda have this in the freezer section of most large groceries - it's a soy product).

Well..you can use the soy crumbles like Morningstar farms or Boca but to be honest..I just make it with the lasagna noodles, a good chunky sauce and cheese.

Why would you want it to? Load it up with spinach, eggplant, olives, bell peppers, mushrooms and cheese and you'll never go back.

Tip: Use ricotta cheese, not cottage cheese. I don't know how you usually make your lasagna but I've met people that use cottage cheese and it's just wrong.

I've found brown lentils to be a good substitute for minced beef in lasagna, spag bol, moussaka, pasticcio etc.

use tofu or try veggie burgers. theyre in the frozen food section, defrost them and crumble them up in the lasagna

you could try buying some veggie burger patties and cook it with the tomato sauce to make it look like meat sauce, then add it between the ricotta, veggies, and pastas.

parsley-yum yum, corgettes, peppers, peas, beans,onion, carrot- ANYTHING! its great just chuck anything you fancy in with no restrictions on 'you must have beef' just have fun experimenting with your fav veg! :)
