I'm not Filipino, and I like the food. But I once heard an explanation that went like this:

When the Spanish invaded, rich Filipino families learnt to enjoy the classic Spanish preparations. They were prepared to pay for the best cuts of meat, the best produce, etc. Poor Filipino families couldn't afford to buy such good produce, so they learnt to cook with the offal and produce that could not be sold to the wealthy.

The food of rich Filipino families still looks like the European cuisine upon which it is based, and most people don't think of this as being ethnic Filipino. On the other hand, the cuisine of poor Filipino families is unique in the ways that they have learnt to prepare and present what is often discarded in other countries. However, the fact that it is based around offal deters many people.

I had tasted a very diverse variety of foods, but hadn't had Filipino food. I told my husband that I wanted to try some. I love Asian foods and I love Spanish foods, so i thought "it must be good if it's a mix of the two". We went to a place that had cafeteria style "serve yourself" foods so I tried lots of different things. I had a few different adobos, a dish made with duck blood, some Filipino Menudo, lechon, a dessert made with casava and coconut. I hope that this was not a good example of Filipino food that I tasted because I was so disappointed. It was just OK. What should I try if I try Filipino food again?

I am not Filipino and I like SOME of their food. I'm from Hawaii and I think there are a lot of people who eat Filipino food there (but there are also a lot of Filipino restaurants). I think there are a few types of Filipino styles of cooking, but the one that we are accustomed to uses A LOT of pork and I really don't like pork much.

The kinds of Filipino food I like are lumpia and sari sari. There are some really strange things that my husband's family eats (like ants) that I would never consider trying.

Ive had several Filipino dishes that were very good.
I love the rice cakes they make, and some of the fish dishes are so flavorful.
I love the fact that other countries use spice and herbs and flavors in there meals. Where the average American meal is usually pretty bland comparatively.
