IYour right, t is 100% a vegetable. However, potato does not contribute to your 5 fruit and vegetables a day. This is only due to it's starch content. A sweet potato however does add to your 5 a day!
She may be getting confused with that perhaps?

The potato is a vegetable.
However, I don't really feel it should be included in the vegetable category.
Thanks to lack of money, many places consider french fries and ketchup to be "servings" of vegetables.
That is psychotic.
Anyway, I am sure my fellow veg*ans will correct me if I am wrong about my disdain for the potato "vegetable."

In the biological sense it is a vegetable. In the nutritional sense it is a simple carbohydrate (most vegetables are complex carbohydrates) and so a diabetic classes them with bread and other grains. They share this quality with sweet potatoes, peas and fresh corn.
