Spaghetti with tarragon, mushrooms and zucchini

Olive oil
1 pound zucchini, trimmed, diced
1/2 teaspoon dried crushed red pepper
2 pounds mushrooms, sliced
21/2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh parsley
3 large garlic cloves, minced

12 ounces spaghetti, freshly cooked
2 large tomatoes, chopped
preparation
Brush large deep nonstick skillet with oil; heat over medium-high heat. Add zucchini and crushed red pepper; sauté until beginning to soften, about 3 minutes. Transfer to bowl. Brush skillet again with oil; heat over medium-high heat. Add mushrooms; sauté until brown and tender, adding water by tablespoonfuls as needed if mushrooms stick to skillet, about 18 minutes. Add zucchini mixture, herbs, and garlic; stir 1 minute. Season to taste with salt and pepper.

Add pasta and tomatoes to mushroom mixture; toss to blend, adding water by 1/4 cupfuls if mixture is dry. Season with salt and pepper. Transfer to bowl.

Spaghetti sauce with no garlic???? Ok, here are some nice additions to a marinara sauce:

1. Chopped artichoke hearts
2. Sliced black olives
3. Parmesan Cheese
4. White beans
5. Grilled red and yellow bell peppers

My sauce is pretty good, with or without meat:

1 large can tomato sauce
1 15 oz can organic diced tomatoes
1 onion, diced
2 cloves garlic (opt.) minced
3 T olive oil
2 lbs turkey Italian Sausage (opt), casings removed
3 T dried italian herbs
1/2 cup chopped fresh basil
1/2 cup chopped fresh oregano
1 tsp kosher salt
1/2 tsp fresh ground pepper
1/4 tsp red pepper flakes (opt.)
1/3 cup olive oil

Saute onion, garlic, and sausage in olive oil until translucent and pink is gone. Add sauce, tomatoes, and herbs. Add olive oil, salt and peppers and simmer for 30 minutes. Add 1/2 cup Parmesan cheese to sauce (opt.) and serve.

How about asparagus and mushrooms in an alfredo sauce? Maybe even peas or fresh spinach. (I toss in baby shrimp, but you can ignore that.)

INGREDIENTS:
1 pound spaghetti
3/4 cup margarine
1 onion, chopped
1 (28 ounce) can whole peeled
tomatoes
1/2 teaspoon salt
3 tablespoons all-purpose flour 1 cup milk
1 cup heavy whipping cream
15 large black olives, halved
1 (4.5 ounce) can sliced
mushrooms
1/2 cup grated Parmesan
cheese

DIRECTIONS:
1. In a large skillet melt 1/2 cup margarine over medium heat. Stir in onion, chopped tomatoes, and salt; simmer for 1/2 hour.
2. Meanwhile, in a large pot with boiling salted water cook pasta until al dente. Drain. Place cooked spaghetti in the bottom of a greased 9x13 inch baking dish.
3. In a small saucepan melt 3 tablespoons of margarine over medium heat. Take off heat and quickly stir in 3 tablespoons of flour to make a paste. Return to heat and slowly stir in the milk. Cook on low, stirring often, until thick. Add heavy cream and continue to cook until slightly thickened.
4. Pour simmered tomato mix over top of spaghetti. Sprinkle on olive halves and mushrooms. Pour cream sauce on top. Sprinkle with grated Parmesan cheese.
5. Bake in a preheated 350 degree F (175 degrees C) oven for 30 minutes.
INGREDIENTS:
1 (16 ounce) package spaghetti
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste 1 teaspoon ground cinnamon
1/4 cup vegetable oil
salt and pepper to taste

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain and stir in tomato sauce, tomato paste, cinnamon, oil, salt and pepper. Transfer to prepared dish.
3. Bake in preheated oven for 1 hour, or until top is crunchy.

INGREDIENTS:
1 (14 ounce) can artichoke
hearts in water
2 tomatoes, chopped
1 onion, chopped 1 cup fresh sliced mushrooms
1/2 cup chopped fresh basil
1/2 cup whole milk
2 tablespoons all-purpose flour

DIRECTIONS:
1. Chop artichoke hearts and place in large skillet with juice. Thicken with flour and milk to desired consistency.
2. Add onion, mushrooms, tomatoes, and basil. Cook for a short time, leaving vegetables firm and tasty and pretty.
3. Cook up a batch of your favorite spaghetti noodles (e.g., angel hair or spaghettini). Rinse. Toss artichoke sauce on top of cooked pasta.
